Fried Rice with Veggies and Sesame




Die DEUTSCHE ÜBERSETZUNG findet ihr unter dem englischen Rezept!


Very easy and a great way to use up any veggies that need to go and, of course, if you have leftover rice! I used leftover white rice and some purple rice, but any type will do. 

Ingredients for 5 servings:

  • 300g of rice (300g before cooking)
  • 4 medium carrots
  • 300g of smoked tofu
  • 4 small onions
  • 1 medium zucchini
  • 50g of sesame seeds
  • soy sauce
  • salt
  • 1 tablespoon of powdered curry
  • some vegetable oil
  • some roasted sesame oil (the dark yummy oil, not the light tasteless stuff)


Instructions:

  • Wash the rice, then cook the rice. Usually that's 1 cup of rice, 2 cups of water... we have a rice cooker which we love dearly! <3
  • Peel the carrots and cut them in small cubes.
  • Dice the onions finely. 
  • Heat up a pan with a few tablespoons of vegetable oil. (Never use a non-stick pan on full heat! Only use 60-70% of the heat with non-stick pans, more heat will damage the non-stick coating!)
  • Fry the onions and carrots on medium heat for a few minutes. 
  • In the meantime you can cut the tofu in cubes and throw them into the pan as well.
  • Cut the zucchini into small cubes, but don't throw them in just yet. Zucchini doesn't take very long to cook, so if you want some crunch to them, don't add them until the very end.
  • Add the rice to the pan, stir well, so everything mixes well.
  • Season with some soy sauce and salt. I am also using salt because I don't want to use up all of my soy sauce. :)
  • Add some sesame oil, the sesame seeds, and dust some curry powder over the food in the pan. 
  • Stir well.
  • Add the zucchini. 
  • Try and see if you need any more salt or sesame oil.
  • Serve and enjoy!

Deutsche Übersetzung:

Gebratener Reis mit Gemüse und Sesam

Ein super einfaches Gericht und außerdem toll um Gemüse aufzubrauchen, das langsam mal weg muss. Und natürlich ist gebratener Reis auch immer perfekt um Reisreste aufzubrauchen. Ich habe lila Reis (bekommt man zum Beispiel im Weltladen) und Reste vom weißen Reis vom Vorabend verwendet.

Zutaten für fünf Portionen:

  • 300g Reis (300g in ungekocht)
  • 4 mittelgroße Möhren
  • 300g Räuchertofu (wir lieben den Räuchertofu von Taifun und von So Lecker Soja)
  • 4 kleine Zwiebeln
  • 1 mittelgroße Zucchini
  • 50g of Sesam
  • Sojasauce
  • Salz
  • 1 Esslöffel Currypulver
  • etwas geröstetes Sesamöl (das dunkle, das so lecker schmeckt!)

Zubereitung:

  • Reis waschen und kochen. Normalerweise ist das ja eine Tasse Reis auf zwei Tassen Wasser, aber wir haben jetzt einen Reiskocher, den wir sehr lieben! <3
  • Möhren schälen und in kleine Würfel schneiden.
  • Zwiebeln fein würfeln.
  • Heizt eine (große) Pfanne mit ein wenig Pflanzenöl auf.
  • Zwiebeln und Möhren auf mittlerer Hitze (beschichtete Pfannen niemals auf höchster Hitzestufe benutzen! Maximal 60-70%!) ein paar Minuten braten.
  • In der Zwischenzeit das Tofu in Würfel schneiden und in die Pfanne geben.
  • Zucchini in kleine Würfel schneiden, aber noch nicht in die Pfanne werfen. Zucchini gart sehr schnell, wenn man also nicht möchte, dass die Würfelchen ihren Biss verlieren, darf man sie erst ganz zum Schluss in die Pfanne werfen.
  • Reis in die Pfanne geben und alles gut verrühren.
  • Mit Sojasauce und Salz würzen. Ich benutze zusätzlich zur Sojasauce Salz, weil ich nicht meine ganze Sojasauce aufbrauchen möchte. 
  • Sesamöl, Sesam und Currypulver in die Pfanne geben.
  • Gut verrühren. 
  • Zucchini hinzugeben, rühren und noch mal mit Salz oder Sesamöl abschmecken, wenn notwendig.
  • Servieren und genießen! Guten Appetit!
