Red Lentil Veggie Soup




Die DEUTSCHE ÜBERSETZUNG findet ihr unter dem englischen Rezept!



Yet another incredibly easy dish! And super tasty, too. If you happen to not have one ingredient or the other in the house, you can always replace things. You can basically swap out any of the veggies as long as you stick to the lentils, water, and seasoning.

Ingredients for six servings:

  • 150g red lentils
  • 3 large carrots
  • 1 leek
  • 3 onions
  • 3 cloves of garlic
  • fresh ginger (about the size of a thumb)
  • salt
  • 3 tablespoons of vegetable oil, for example, sunflower seed oil.
  • 50g tomato paste
  • 1l of water
  • a handfull of hazelnuts
  • half a green bell pepper
  • half a red bell pepper
  • 2 table spoons of balsamic vinegar
  • a handfull of fresh herbs, for example, parsley or basil


Instructions:

  • Cut the onions in chunks. No need to put too much time into this. Since the soup will eventually be blended, chunks are ok.
  • The same goes for the carrots: Peel them and cut them coarsley, maybe in to 2.5cm/1 in slices.
  • Clean the leak and cut it in half, then cut thick slices.
  • Take the garlic out of the peel and press the cloves flat with a knife, then cut each smashed clove in quarters.
  • Peel the ginger and cut it into small chunks.
  • Get a big pot, add the oil, once the oil has heated up a bit, add the onions and leek.
  • Season with a bit of salt.
  • Roast the onions and leek for two minutes. Stirr every now and then so nothing burns.
  • Add the carrots and roast for another 2 minutes.
  • Add the lentils, the ginger and the garlic.
  • Add the water.
  • Allow to cook for about 15 minutes.
  • In the meantime you can chop the hazelnuts coarsely. 
  • Roast the hazelnuts in a pan. 
  • Cut the bell peppers into small cubes, chop the herbs coarsely. 
  • Mix the pepper cubes with the herbs, add the vinegar.
  • Add the hazelnuts to the peppers/herbs.
  • After the soup has cooked, add the tomate paste, then blend it! I used a regular blender but only because I didn't have access to my beloved immersion blender. :)
  • Season with salt if any more is necessary.
  • Before serving the soup, sprinkle two tablespoons(ish) of the pepper/hazelnut/herb mixture on top of each plate.

Optional: Use different colors of bell peppers and maybe throw in
some finely chopped dried tomatoes!

Schon wieder ein super einfaches Gericht! Und dann auch noch echt lecker! Wenn man das ein oder andere, was hier auf der Liste steht, nicht da hat, kann man eigentlich fast alles austauschen. Solange man bei der Basis von Linsen, Wasser, und Gewürzen bleibt, ist man auf der sicheren Seite.

Zutaten für sechs Portionen:
  • 150g rote Linsen
  • 3 große Möhren
  • 1 Stange Lauch
  • 3 Zwiebeln
  • 3 Zehen Knoblauch
  • Frischer Ingwer (ein Stück ungefähr so groß wie ein Daumen)
  • Salz
  • 3 Esslöffel Pflanzenöl, zum Beispiel Sonnenblumenöl
  • 50g Tomatenmark
  • 1l Wasser
  • Eine Handvoll Haselnüsse
  • Eine halbe grüne Paprika
  • Eine halbe rote Paprika
  • 2 Esslöffel Balsamico
  • Eine Handvoll frische Kräuter, zum Beispiel Petersilie oder Basilikum

Zubereitung:

  • Zwiebeln grob klein schneiden. Da muss jetzt keine Zeit in feine Würfel investiert werden, weil die Suppe später eh püriert wird.
  • Das Gleiche gilt für die Möhren: Schälen und grob schneiden, so ungefähr in 2,5cm/1Zoll dicke Scheiben.
  • Lauch säubern (wir wollen keine Erde in der Suppe), halbieren und dann in grobe Scheiben schneiden.
  • Knoblauch schälen und mit einer Messerklinge flach auf ein Brettchen drücken, dann jede Zehe vierteln.
  • Ingwer schälen und klein schneiden.
  • In einem großen Topf Öl erhitzen, sobald es Temperatur hat Zwiebeln und Lauch hineingeben.
  • Salzen.
  • Zwiebeln und Lauch etwa zwei Minuten anrösten. Ab und zu rühren, damit nichts anbrennt.
  • Möhrenstücke hinzugeben und weitere zwei Minuten rösten.
  • Dann Linsen, Ingwer, Knoblauch und Wasser hinzugeben.
  • Etwa 15 Minuten köcheln lassen.
  • In der Zwischenzeit die Haselnüsse grob hacken.
  • Nüsse in einer Pfanne anrösten.
  • Paprika kleinschneiden (dieses Mal wirklich schön klein ;) ).
  • Kräuter grob hacken.
  • Paprikawürfelchen mit Kräutern und Essig mischen.
  • Geröstete Nüsse hinzugeben.
  • Sobald die Suppe gekocht ist, Tomatenmark hinzugeben und dann pürieren. Ich habe einen Standmixer benutzt, weil mein geliebter Zauberstab in meiner eigenen Küche zu hause war. ;)
  • Mit Salz nachwürzen, wenn notwendig.
  • Nach dem Pürieren ist die Suppe fertig.
  • Einfach in einen Teller geben und mit ein paar Löffeln Kräuter-Paprika-Nuss-Mischung garnieren!
