Filled curry bell peppers with quinoa

Die deutsche Übersetzung findet ihr unter dem englischen Rezept!


I had a request for a "not boring" recipe of filled bell peppers on my facebook page a while ago... and here is my take on "not boring filled bell peppers." :)




I was making up the recipe as I cooked, so these ingredients are all in the dish,
but, for example, not the whole cauliflower. 


Ingredients:

  • 150g fresh cauliflower
  • 150g chickpeas
  • 1 medium sized carrot
  • 250g frozen spinach (fresh should work, too, but I didn't find any)
  • 6 bell peppers
  • 400ml coconut cream
  • 1-3 tablespoons of curry paste (depending on how hot you like your food)
  • 150g quinoa (+300ml of water)
  • salt



Instructions:

  • Find an oven-safe dish that can hold all of your bell peppers. Chances are that they will not stand up by themselves. Or at least some will need some extra support.


  • Wash bell peppers.
  • Cut around the stem to remove seeds.
  • Clean out the interior of the bell peppers and place the peppers back in your oven-safe dish. 


  • Heat up a pot on the stove and add the curry paste.
  • Toast the curry paste until you can smell the paste.
  • Add coconut cream, and stirr thoroughly until the paste dissolves.
  • Season with salt if necessary (depends on your curry paste).



















  • Cut cauliflower into small pieces.
 

  • Peel the carrot.
  • Cut it into thin slices (as thick as a match).
  • If you have adorable flower cutters like me, turn those carrots into pretty flowers, because vegans eat flowers!




  • Chop up the rest of the carrots.
  • Add carrots (not the pretty flowers!) and cauliflower to the curried coconut cream.
  • Turn on the heat a bit. Don't bring the cream to a boil, though.



  • Preheat oven to 200°C/390°F.
  • At this point, we can also get started on the quinoa.
  • Wash the quinoa thoroughly.
  • Add quinoa (150g) and the water (300ml) to a large pot.
  • Put the carrot flowers on top.
  • Bring to a boil, then turn down the heat and let the quinoa soak up the water.


























  • Press any excess water out of the spinach.
  • Drain the chickpeas.
  • Add spinach and chickpeas to the coconut cream.













  • Fill the bell peppers with the coconut cream/veggies.













  • Once the quinoa is cooked, take 12 carrot flowers out of the pot, 
  • Season the quinoa with salt, stir well. 
  • Keep the lid on the pot, and remove the pot from the heat.
  • Decorate your bell peppers with 2 carrot flowers each, and put the dish with the peppers in the preheated oven.
  • Bake for 20 minutes. After 20 minutes, the bell peppers will still have some crunch. So if you like them softer, keep them in the over for some extra minutes.













  • Take the peppers out of the oven and serve with the quinoa!
  • Enjoy!

Ich hatte vor einiger Zeit eine Anfrage für ein Rezept für "nicht langweilige" gefüllte Paprika auf meiner facebook Seite.. und das hier ist dabei rausgekommen! :)




 Ich habe mir das Rezept beim Kochen erst notiert und ausgedacht, darum entspricht die Menge der Zutaten hier nicht
genau der Realität. Ich habe nämlich keinen ganzen Blumenkohl reingepackt.

Zutaten:

  • 150g frischer Blumenkohl
  • 150g Kichererbsen (vorgekocht, bzw. aus dem Glas)
  • 1 mittelgroße Karotte
  • 250g gefrorener Spinat (frisch wäre auch gegangen, aber es gab grade keinen)
  • 6 Paprika
  • 400ml Kokosmilch
  • 1-3 EL Currypaste (je nach dem wie scharf man das Essen mag)
  • 150g Quinoa (+300ml Wasser)
  • Salz



Zubereitung:

  • Erst mal eine ofenfeste Auflaufform finden, in die alle Paprika reinpassen. Die Chancen stehen nämlich ganz schön gut, dass die Paprika nicht von alleine stehen. Oder wenigstens, dass einige etwas Unterstützung brauchen.
  • Paprikas waschen.
  • Um den Stiel herum schneiden um die Kerne entfernen zu können.
  • Das Innenleben der Paprika entfernen und sie wieder in die Auflaufform packen.  


  • Einen Topf auf dem Herd erhitzen und die Currypaste hineingeben.
  • Die Currypaste anrösten bis sie anfängt Aromen zu verströmen.
  • Kokosmilch hinzugeben und verrühren bis die Currypaste sich aufgelöst hat.
  • Mit Salz nachwürzen, falls notwendig (kommt auf die Marke und Menge eurer Currypaste an).


















  • Blumenkohl in keine Stücke schneiden.
 

  • Karotte schälen.
  • In dünne Scheiben schneiden (etwa streichholzdick.)
  • Wenn ihr so niedliche Blümchenausstecher habt wie ich, schneidet die Möhrenscheiben into schöne Blümchen. Veganer essen nämlich Blümchen!


  • Den Rest der Möhren klein hacken.
  • Möhrenstückchen (nicht die Blümchen!) und Blumenkohl in die Curry-Kokosmilch.
  • Leicht erhitzen, aber nicht zu Kochen bringen.



  • Ofen auf 200°C/390°F vorheizen.
  • Jetzt kann man auch schon mal mit dem Quinoa anfangen.
  • Quinoa ordentlich waschen.
  • 150g Quinoa und 300ml Wasser in einen größeren Topf geben.
  • Möhrenblumen auf das Quinoa geben.
  • Kurz aufkochen, dann (mit dem Deckel drauf) vom Herd nehmen, damit das Quinoa den Rest des Wassers aufsaugen kann.  























  • Wasser aus dem TK Spinat drücken.
  • Kichererbsen abgießen.
  • Spinat und Kichererbsen zur Kokosmilch geben.













  • Paprikas mit Kokosmilch-Gemüse-Mischung füllen.













  • Sobald das Quinoa fertig ist, 12 Möhrenblümchen aus dem Topf fischen.
  • Quinoa mit Salz würzen, gut umrühren.
  • Deckel auf dem Topf lassen und vom Herd nehmen. 
  • Die gefüllten Paprika mit jeweils zwei Möhrenblümchen dekorieren und die Auflaufform mit den Paprika in den vorgeheizten Ofen stellen.
  • 20 Minuten backen. Nach 20 Minuten sind die Paprikas noch ein wenig crunchy. Wenn man sie weicher mag, lässt man sie halt etwas länger im Ofen.













  • Paprika aus dem Ofen nehmen und mit dem Quinoa servieren.
