Thai Noodle Soup

Die deutsche Übersetzung findet ihr unter dem englischen Rezept!




Okay, okay, I call it Thai, but this is not an "authentic" (whatever that may mean) Thai recipe. But there is a deli near my work where I go once a week with my colleagues and one of the two (vegan) things that I like there is their "Thai soup". So I tried to recreate the recipe and added a thing or two.




Ingredients:


  • 750ml veggie stock
  • 500ml puréed tomatoes
  • 400ml coconut cream
  • some rice noodles (vermicelli, but it also appears to work great with mie noodles)
  • 1 bell pepper
  • some soy sauce
  • 1 tablespoon of coconut oil
  • 1 tablespoon of red curry paste (or more ^^ I just don't want to be responsible for burnt tongues... I use more ^^)

I actually used vermicelli rice noodles, but only noticed
that I had used the wrong description when someone made it with
mie noodles - still look like it turned out great! :)


Instructions:

  • Melt the coconut oil in a big pot.
  • Add curry paste and roast it for a little while.


  • Stir the curry paste a bit more so the coconut oil and paste blend.
  • Add the coconut milk and stir until the curry paste dissolves.
  • Make sure you dissolve the curry paste now. If the pot is too full, it will be difficult to actually do this well.



  • Cut the bell peppers into small chunks.



  • Add the veggie stock and puréed tomatoes.



  • If you made a double portion of the soup and intend to freeze one, this is where you take out the portions that need to be frozen. If you're not planning to freeze anything as homemade convenience food, keep going.
  • Add the noodles to the pot. 
  • Let the noodles soak up some soup - you do not have to pre-cook them. However, when I make the soup for more people (= double the portion), I usually precook the noodles in some salt water so I can just add the noodles shortly before serving.



  • Eating soup with a spoon although there are long noodles in it can be a mess... So take some scissors and cut up those noodles for your own safety!



  • Season with soy sauce if necessary.
  • Add the bell pepper chunks.
  • Allow the chunks to cook for a minute, then serve.



  • Done! Enjoy!







Deutsche Übersetzung:



Okay, okay, ich nenne es eine Thaisuppe, aber es ist kein"authentisches" (was auch immer das heißt) Thai-Rezept. Aber in einem Deli in der Nähe von meiner Arbeit, in das ich ein mal in der Woche mit meinen Kollegen bin, gibt es zwei vegane Sachen, die ich mag... und eine der Sachen ist deren "Thai Suppe". Darum habe ich das Rezept versucht nachzumachen und habe noch ein oder zwei Sachen mehr reingeworfen.




Zutaten:


  • 750ml Gemüsebrühe
  • 500ml passierte Tomaten
  • 400ml Kokosmilch
  • ein paar Reisnudeln
  • 1 Paprika
  • etwas Sojasauce
  • 1 EL Kokosöl
  • 1 EL rote Currypaste (oder mehr ^^ Ich will nur nicht an verbrannten Zungen Schuld sein... Ich verwende mehr Paste ^^)

Upsi, sind eigentlich gar keine Mie-Nudeln, sondern die dünnen
Vermicelli Reisnudeln. Hat aber wer mit Mie Nudeln nach gekocht
und es war trotzdem gut. :)


Zubereitung:

  • Kokosöl in einem großen Topf schmelzen.
  • Currypaste dazugeben und eine Weile anrösten.


  • Currypaste gut verrühren, damit sie sich mit dem Kokosöl vermischt.
  • Kokosmilch dazugeben und so lange rühren bis die Currypaste sich vollkommen aufgelöst hat.
  • Achtet darauf, dass die Currypaste jetzt wirklich aufgelöst ist. Wenn der Topf später zu voll ist, geht das nicht mehr so gut.

  • Paprika in kleine Stücke schneiden.

  • Gemüsebrühe und passierte Tomaten dazu geben.



  • Falls ihr die doppelte Menge macht um was einzufrieren, dann ist jetzt der Punkt, an dem ihr die Portionen rausnehmt, die ihr einfrieren wollt. Wenn ihr nichts als selbstgemachtes Convenience Food einfrieren wollt, einfach weiter machen.
  • Reisnudeln in den Topf geben.
  • Lasst die Nudeln schön Suppe aufsaugen - man muss die Nudeln auch nicht vorkochen. Allerdings koche ich sie vor, wenn ich die Suppe für mehr Leute mache (und die Portion verdoppele). Dann koche ich die Nudeln in etwas Salzwasser vor und gebe sie kurz vorm Servieren in die Suppe.

  • Suppe mit nem Löffel essen kann zu großen Sauereien führen, wenn man lange Nudeln in der Suppe hat. Also Schere in die Hand und die Nudeln zu eurer eigenen Sicherheit klein schneiden.


  • Mit Sojasauce würzen, wenn notwendig. Das hängt davon ab wie salzig eure Currypaste ist.
  • Paprikastücke in die Suppe geben.
  • Paprikastücke ein Minütchen in der Suppe ziehen lassen.


  • Servieren! Fertig! Guten Hunger!
