Donuts / Berliner

Die deutsche Übersetzung findet ihr unter dem englischen Rezept!


In Germany, donuts of the American kind (including the major donut chain shops) exist. However, the storebought kind is never vegan - at least I have never encountered any. There are German donuts whose names vary depending on the region you find yourself in. Berliner, Pfannkuchen, Krapfen... They are usually round, dusted with powdered sugar and filled with some type of jam. This recipe works for your regular O-shaped donuts and any other shape you like - including the type that is filled with jam. :)

We had these at our most recent birthday party and a lot of people who said they usually did not like Berliner, really enjoyed them!

Your classical donut!



You will need a deep fryer ... and if you want to fill the donuts with jam some kind of syringe that is thick enough to inject the jam.

Ingredients for the dough:

  • 280g of flour (whole wheat works, too!)
  • 200ml of soy milk (or any other plant milk)
  • 1 tablespoon of vanilla flavored sugar (or use real vanilla beans!)
  • 30g of  granulated sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon of dry yeast
  • 2 teaspoons of soy flour (or chickpea flour)
  • 30g of coconut oil

Ingredients for the icing (if you're making regular donuts):

You won't need these if you're making the Berliner type.
  • 100g of powdered sugar
  • 30g of vegan butter (for example Earth Balance)

Additonal ingredients for Berliner:

You won't need these if you're making regular donuts.
  • 100g of jam of your choice. Make sure it's the smooth type without seeds etc.
  • 50g of powdered sugar for dusting



Instructions: 

Mix flour, salt, soy flour, sugar, and yeast in a big bowl.

The flour looks darker because we only had whole wheat the first time
we made them. Works great, too!

  •  Cut shortening/coconut oil in small chunks.
  • Add shortening and milk to the mixture and knead.
  • Add a bit more flour/milk if necessary.


  • Dust kitchen counter/table top with some flour and knead by hand some more until nice and smooth.
  • Cover the dough and allow to rest and rise in a warm environment for one hour.


  • Roll out the dough until it is about 1/2 in (1.2cm) thick.



  • If you're making donuts and don't have a donut cutter (like us... until we got one at our birthday party), first use a larger glass, then a smaller on to get that dough into doughnut shape. However, you can use any cookie cutter you want!

  • You can make all the hedgehogs, squirrels and other shapes you want! :)
  • After you have cut out your dough, put the pieces on a cookie sheet lined with parchment paper. Allow to rest and rise for 30-60 minutes (while covered).



  • Preheat your deep fryer to 170°C/340°F.
  • If you are making donuts: In the meantime, you can melt the vegan butter in a small pot, and add the powdered sugar.
  • Stirr well until the sugar is integrated into the molten butter.

  • Once deep fryer is hot enough, put a few doughnuts into the hot oil. Lower the basket before putting the doughnuts in there! If you put the doughnuts in the basket and then lower it, the doughnuts might stick to the basket. We usually use a metal skimmer or a cooking tongs to put each piece into the oil.



  • Fry from both sides (you will have to turn them over once the lower side is nice and golden).
  • If you are making donuts: Spread icing on top and serve! Done!
  • If you are making Berliners: Allow to cool down, then fill a syringe with jam, fill the Berliners with it. Then dust Berliners with powdered sugar. Done!

Deutsche Übersetzung:

In Deutschland gibt es ja auch amerikanische Donuts (und die entsprechenden Ketten)... Aber die Donuts aus dem Laden sind in der Regel nicht vegan - jedenfalls hab ich noch keine gefunden. Bei uns heißen die Dinge ja anders, je nachdem wo man herkommt. Berliner, Pfannkuchen, Krapfen... und unsere sind rund mit Marmeladenfüllung und Puderzucker drauf. Mit diesem Grundrezept kann man sowohl die runden amerikanischen Donuts machen... oder jede andere Form, die man mag - inklusive der runden Berlinerform. :)

Wir hatten die Berliner unserer letzten Geburtstagsparty und viele Leute, die sagten, sie mögen Berliner sonst nicht, fanden sie echt gut!

Und der klassische Donut :)



Für dieses Rezept braucht man eine Fritteuse (oder einen Topf voll Öl)... und wenn man die Berliner füllen möchte, braucht man eine Spritze, die dick genug ist, als dass man die Marmelade in die Berliner spritzen kann.

Zutaten für den Teig:

  • 280g Mehl (Vollkorn geht auch)
  • 200ml Sojamilch oder andere Pflanzenmilch
  • 1 TL Vanillinzucker (oder echte Vanille)
  • 30g Zucker
  • 1/2 TL Salz
  • 1 TL Trockenhefe
  • 2 TL Sojamehl (oder Kichererbsenmehl)
  • 30g Kokosfett

Zutaten für den Zuckerguss (für die Donuts):

Braucht ihr nicht, wenn ihr Berliner macht.
  • 100g Puderzucker
  • 30g Margarine (zum Beispiel Alsan)


Weitere Zutaten für Berliner:

Braucht ihr nicht, wenn ihr Donuts macht.
  • 100g Marmelade nach Wahl (am besten welche ohne Kerne etc)
  • 50g Puderzucker zum Bestäuben



Zubereitung: 

  • Mehl, Salz, Sojamehl, Zucker und Hefe in einer großen Schüssel mischen.


Das Mehl sieht hier dunkler aus, weil wir beim ersten Mal grade nur
Vollkornmehl da hatten. Funktioniert auch super!
  • Kokosfett in kleine Stückchen schneiden.
  • Kokosfett und Milch in die Mischung geben und verkneten.
  • Bei Bedarf etwas Mehl/Flüssigkeit nachgeben.


  • Arbeitsfläche mit Mehl bestäuben und Teig noch mal von Hand kneten bis er schön glatt ist.
  • Teig abdecken und eine Stunde in warmer Umgebung gehen lassen.

  • Nach dem Gehenlassen Teig gut 1cm dick (1/2 Zoll) ausrollen.

  • Wenn man Donuts macht und keinen Donutausstecher hat (wie wir bis wir einen bei unserer Geburtstagsfeier einen geschenkt bekommen haben), erst  mit einem größeren, dann mit einem kleineren Glas ausstechen. Oder einfach jede Form Keksausstecher nehmen, die man will.
  • Man kann Igel ausstechen, oder Eichhörnchen, oder alles, was man mag! :)
  • Nach dem Ausstechen, Teigrohlinge auf ein Backblech mit Backpapier legen, abdecken und dann 30-60 Minuten gehen lassen.

  • Fritteuse auf 170°C/340°F vorheizen.
  • Wenn ihr Donuts macht: Schon mal in der Zwischenzeit Margarine in einem kleinen Topf schmelzen und den Puderzucker dazu geben.
  • Gut rühren, bis alles eine homogene Masse ist.

  • Sobald die Fritteuse auf Temperatur ist, ein paar Donuts (nicht zu viele auf einmal) ins heiße Öl geben. Den Fritteusenkorb ins Fett lassen bevor man was rein tut! Wenn man die Donuts erst in den Korb packt und ihn dann ins Fett runter lässt, kann der Teig am Korb festkleben. Wir benutzen meistens eine Schaumkelle aus Metall oder Kochzangen um die Teigrohlinge ins Öl zu geben.

  • Von beiden Seiten frittieren - Umdrehen, sobald die untere Seite schön goldbraun ist.
  • Wenn ihr Donuts machen: Aus dem Öl nehmen und den Zucker/Fettguss oben drauf. Servieren! Essen!
  • Wenn ihr Berliner macht: Aus dem Öl nehmen und abkühlen lassen, dann die Spritze mit Marmelade füllen, Berliner damit füllen. Mit Puderzucker bestäuben, fertig!
