Graupensuppe | Pearl Barley Soup

English version below

Das ist mal wieder ne einfache Angelegenheit, die mich aber total an meine Kindheit erinnert. Ich habe sicher 15 Jahre keine Graupensuppe gegessen… Und dann doch noch mal versucht. Beste Idee!



Ups, da hab war ich etwas zu großzüig mit den Graupen (erster Versuch)




Zutaten für 2 Portionen:

  • 125g Perlgraupen (ich nehme die groben)
  • 2 große Möhren
  • 1 kleine Stange Lauch
  • 600ml Gemüsebrühe
  • 2 Schalotten
  • 100g Räuchertofu (optional)
  • 1 EL Olivenöl
  • Ggf. Salz (kommt drauf an wie salzig die Brühe ist)
  • etwas frische Petersilie


Zubereitung:
Möhren schälen und in kleine Würfel schneiden.
Schalotten hacken (muss nicht superfein sein).
Lauch halbieren, reinigen und dann in Scheiben schneiden.
Olivenöl in einem Topf erhitzen.
Möhren und Schalotten hinzugeben und bei geringer Hitze anbraten bis die Schalotten glasig sind.
Lauch und Graupen dazu geben.
Gemüsebrühe drüber geben.
Kochen bis die Graupen gar sind.
Mit Salz abschmecken (wenn notwendig).
Räuchertofu in Würfel schneiden und dazu geben.
Vorm Servieren mit etwas gehackter Petersilie bestreuen.
Fertig!

English version

Another one of those simple meals that remind me of my childhood. I didn’t eat pearl barley soup for about 15 years…. And then tried it again. Best idea!


First try - I used a little too much pearl barley.


Ingredients for 2 servings:

  • 125g of pearl barley (I used the coarsest kind)
  • 2 big carrots
  • 1 small leek
  • 600ml of veggie stock
  • 2 shallots
  • 100g of smoked tofu (optional)
  • 1 tbsp of olive oil
  • Maybe some salt (depends on how salty your veggie stock is)
  • some fresh parsley


Instructions:
Peel and dice carrots.
Chop shallots (doesn’t have to be super fine).
Cut leek in half, clean, then slice.
Heat up olive oil in pot.
Add carrots and shallots, and on low heat, fry until the shallots get transluscent.
Add leek and pearl barley.
Add veggie stock.
Simmer until pearl barley is cooked.
Season with salt (if necessary!).
Cut smoked tofu in cubes and add to the pot.
Sprinkle with some chopped parsley before serving.
Done!
