Spaghetti Sommer Rollen | Spaghetti Summer Rolls

Seit meiner letzten Dienstreise mit Ilona von No Fastfood Today bin ich ja angetan von der Idee Reispapier nicht nur mit asiatischen Füllungen zu versehen. Gestern gab's Spaghetti und ich hab etwas zu viel gemacht. Da habe ich einfach mal Reispapierrollen mit eher italienischer Füllung gemacht.








Zutaten:
  • 8 Blätter Reispapier (22cm Durchmesser)
  • 200g gekochte Nudeln (Ich habe Restespaghetti genommen, Andere Nudeln sollten auch gehen)
  • 8 große Blätter Basilikum
  • 8 getrocknete Tomaten (in Öl)
  • 12 Mini-Datteltomaten oder Cherrytomaten
  • eine Hand voll Rukola


Für die Sauce:
  • 3 EL Balsamico
  • 1 EL Agavendicksaft
  • 1 EL Senf
  • 3 EL Olivenöl
  • 2 EL Sojasauce

Zubereitung:

  • Wenn die Nudeln noch nicht gekocht sind: Nudeln kochen und abkühlen lassen.
  • Getrocknete Tomaten abtropfen lassen und in kleine Stückchen schneiden
  • Basilikum grob hacken.
  • Frische Tomaten vierteln und Kerne entfernen.
  • Einen großen Teller mit Wasser bereit stellen.
  • Eine Stück Reispapier kurz von beiden Seiten im Teller unter Wasser drücken. Nicht drin liegen lassen.
  • Reispapier auf eine glatte Fläche legen und Nudeln, Basilikum, getrocknete Tomaten, frische Tomaten und Rukola darauflegen. 
  • Es sollte alles auf einem kleinen Haufen mittig auf der unteren Hälfte des Reispapiers liegen. (Hier könnt ihr sehen, wie ich das bei vietnamesischen Sommerrollen mache.)
  • Die untere Seite des Reispapiers über die Füllung ziehen. 
  • Die Seiten darüber schlagen und dann alles aufrollen.
  • Für die Sauce einfach alle Saucenzutaten kurz mit einem Pürierstab zusammen mixen.
  • Fertig!

Since my last business trip with Ilona of No Fastfood Today I got hooked on the idea to use rice paper with other fillings than just Asian inspired veggies. Yesterday we had spaghetti, and it just so turned out I made too much. So I made rice paper rolls with a more Italian filling.





Ingredients:
  • 8 sheets of rice paper (22cm diameter)
  • 200g of cooked pasta (I used left over spaghetti, but other pasta should work, too)
  • 8 big leaves of fresh basil
  • 8 dried tomatoes (in oil)
  • 12 mini plum tomatoes or cherry tomatoes
  • a hand full of arugula


For the sauce:
  • 3 tbsp balsamic vinegar
  • 1 tbsp agave syrup
  • 1 tbsp mustard
  • 3 tbsp olive oil
  • 2 tbsp soy sauce

Instructions:

  • If you don't have cooked pasta yet: Cook pasta and allow to cool down.
  • Drain tomatoes and cut into small pieces.
  • Coarsely chop basil.
  • Quarter fresh tomatoes and remove seeds.
  • Prepare a big plate filled with water.
  • Briefly submerge a piece of rice paper in the water so both sides get moist. Do not soak in the water for too long.
  • Put moist rice paper on an even surface and put pasta, basil, fresh and dried tomatoes, and arugula on top.
  • Everything should be in a small pile in the middle of the lower half of the rice paper (Take a look at this to see how I make a summer roll.)
  • Take the lower side of the rice paper and pull it over the filling. 
  • Pull the sides of the towards the middle.
  • Roll up the summer roll.
  • For the sauce: Blend together all of the sauce ingredients.
  • Done!
