Facon | Reispapierbacon | Rice Paper Bacon

Ich hab ja auch schon mal Facon aus Seitan gemacht - auch super und für andere Gericht auch eine großartige Option, aber Reispapierbacon mag ich fast noch lieber. Außerdem ist es auch recht schnell gemacht.  
Das Rezept ist ursprünglich von 2016, aber ich habe es 2022 basierend auf neuen Erkenntnissen aktualisiert :) Jetzt weiß ich nämlich, wie das weniger Sauerei macht (backen statt braten!)

Facon - Your Homemade Fake Bacon

A lot of people out there consider eating bacon a religion... or at least they treat it in a similar way. So I thought about what makes bacon so tasty. It's fat, salt, roasted protein and smoke flavor. Well, it sure wasn't too difficult to put all of that into a vegan product. It's pretty easy, too! Here is how to get your facon!

Make Your Own Seitan Kebab

I am not willing to give up my kebab! Kebabs are basically a national dish where I'm from. (Ah, the Ruhrgebiet. <3) I've bought my fair share of vegan kebab "meat" and it was always good, but I just wanted to make that stuff myself. Without spending as much money.

Since making the kebab "meat" always takes a while, we always make big batches and freeze double portions. This basic kebab recipe is great in your conventional kebab, but it's also great in wraps.



Ingredients:

Keep in mind, this is the big batch we make so we have plenty of extra food to be frozen. You can easily cut the recipe in half or even quarters. This should make 2 to 2.5kg of kebab "meat".
  • A handfull of dried shiitake mushrooms
  • 1kg of gluten
  • ca. 3l of veggie stock
  • 12 tablespoons of kebab spice blend (this really depends on the spice blend you’re using. We’re using one that contains no salt and no msg)
  • 12 tablespoons of paprika
  • 5 tablespoons of salt
  • 100g of tomato paste
  • 4 tablespoons of olive oil and a bit extra
  • 100ml of soy sauce
  • 100ml water

Adventures at the Asian Wholesale!

Finally, our food friends and us made plans to do something besides cooking for each other and eating food. We went on a little adventure trip to the neighboring city (Oberhausen, in case anyone cares) to pick up some products we had learned about in our Thai cooking class. Mushroom sauce, for example!

We got our obligatory must-buy list:

  • 3l of coconut milk
  • new green Thai curry paste
  • sesame
  • woks
  • julienne slicer
  • 1.9l Kikkoman soy sauce bottles
  • fresh lemon grass
  • fresh galgant
  • and squishy tofu (yeah, that's my professional cooking term for the type of tofu that is softer than the stuff I get at the regular supermarket)
But we also took the gamble of trying some other stuff. We mostly stay in the safe zone, but here is what we bought!
