Curry Sauce

Where I am from, a good Currywurst (a bratwurst with the curry sauce you'll find in this recipe) is of great cultural value. Songs have been written about it, and different regions in Germany claim that their version of the dish is the best - while that clearly isn't true. ;) We've gotten a lot of requests for the recipe - because we tend to bring the sauce to barbecues - so here it is (roughly based on the version of my friend Hanna over at FoodbyHon).

Another Lunch: Green Curry Creamed Potatoes, Beans, Peanuts with Spinach, Peas and Onions

Would I even consider this a real recipe? No. It's just the panic-y "I don't want to go grocery shopping - what's left in pantry and freezer?" meal. But you never know if anyone can is it as inspiration! After all, it's a quick and easy lunch.

Thai Noodle Soup

Okay, okay, I call it Thai, but this is not an "authentic" (whatever that may mean) Thai recipe. But there is a deli near my work where I go once a week with my colleagues and one of the two (vegan) things that I like there is their "Thai soup". So I tried to recreate the recipe and added a thing or two.

I had a request for a "not boring" recipe of filled bell peppers on my facebook page a while ago... and here is my take on "not boring filled bell peppers." :)




I was making up the recipe as I cooked, so these ingredients are all in the dish,
but, for example, not the whole cauliflower.

Curry Coconut Milk Potatoes with Spinach and Cauliflower

Yet another Tuesday work lunch! Monday nights are always a bit of a challenge because I want to cook something nice for my colleague and myself. Something that can easily be taken to work, heated up, and then eaten. And since my friend - unlike me - does not appreciate the taste of meat (and never has), I always want to make sure I make a wholesome, nice meal without making it seem like I'm just bringing side dishes. Curries and chilis are the obvious choice... and for today I did another curry based dish, but a little different from the green Thai curry or the regular tomato based curry. I have something similar every time we are at the Indian restaurant with my boyfriend's parents, ... except they put much more garlic in there. Which I like. But I don't really consider that a great idea for work lunches. So, if you eat this in the privacy of your home or do not care if your breath wreaks havoc on humanity: Don't forget to throw in as much garlic as you like!

Ingredients for 5-6 servings:

  • 1kg of potatoes
  • 1 cauliflower
  • 500g of spinach
  • 1l coconut milk
  • 3 onions
  • massaman curry paste
  • some coconut oil 
  • salt - if necessary. I didn't use any because I was happy with the salt content of my curry paste
  • optional: fresh garlic (preferably chopped finely and added to the pot along with the onions)

Super Easy Lentil Salad!

I'm currently staying in Berlin with friends while I'm doing some research for work in the basement of a library (oh yeah, microfilms!)... Fortunately, I get to use my friends' kitchen! I worked in an archive (in a small town in Eastern Germany) for a week last year and not having a kitchen drove me crazy... I was "only" a vegetarian back then, so getting food wasn't quite as hard yet. Now that I'm in Berlin, vegan food is really easy to come by, but I just love to cook, so was I am more than grateful that I can use my friends' kitchen.

Today, I made a "leftovers and stuff that needed to go" dish. This lentil salad was part of it:


Ingredients:

  • 100g of red lentils
  • 200ml of veggie stock
  • 1 tomato
  • half a green bell pepper
  • half a yellow bell pepper (leftovers from yesterday's soup!)
  • 1 onion
  • some salt (optional! Depends on how salty your veggie stock is!)
  • some pepper
  • 1/2 tablespoon of powdered curry
  • 1 1/2 tablespoons of balsamic vinegar (or really any other yummy vinegar)

Veggi Galore: Massaman Curry

How do you put as many different vegetables as possible in one pot? Curry is definitely a good option here!

Disclaimer: This is most likely not a traditional Indian curry. That's ok. I just don't know any better. So far everyone who has tried this curry, though, said that it was good. Still - I'm not claiming any sort of authenticity.



Ingredients:

  • 4 tablespoons of coconut oil
  • 8 tablespoons of curry paste
  • 1 l of veggi stock
  • 1 l of tomatoes
  • 1 pineapple
  • 5-6 small onions
  • 250g spinach (I used frozen)
  • 300g peas (I used frozen)
  • 5 carrots
  • 1 eggplant
  • 2 large bell peppers
  • 1 can of coconut milk
  • As much rice as you want - we ended up not making any rice in order to keep this a low carb dish.
  • This is also a dish in which you can nicely add a couple of TSP (texturized soy protein) chunks. Cook a handful or two in salt water, press out the excess water and add them to the pot.
