Easy: Rice Salad | Einfach: Reissalat

Ich brauchte noch schnell eine Beilage für meine gefüllten Zucchini, da hab ich mich in der Küche umgesehen und noch ein paar Sachen zusammen gesucht. Ehrlich gesagt kommen so viele meiner Rezepte zu Stande: Was ist noch da und was muss noch weg und was kann ich damit denn so machen?

This is one of those dishes that comes up when I am looking for something else and then come across a random spice blend and add it what I was working with... So here we have the Garam Masala chickpea edamame salad with sesame.

Hummus Vinaigrette

My love for home made hummus is great. Great enough to consider using it as the base for a salad dressing. And it made one creamy, beautiful vinaigrette for my quinoa veggie salad!

Bulgur Asparagus Salad with Walnuts

Inspired by a non-vegan (and generally different) version of this recipe (which I found through buzzfeed! :)), I decided to make a vegan version for a birthday party that we'll attend this weekend. Asparagus season just kicked in, so what better thing to make than an asparagus salad?

Ingredients:

  • 750-1000g green asparagus
  • 300g Bulgur (600ml water)
  • 150g Cashew Feta
  • 100g walnuts
  • 3-4 medium sized carrots
  • A hand full of fresh parsley
  • 80ml olive oil
  • 4 tablespoons mustard
  • 3 tablespoon balsamic vinegar
  • 3 tablespoon lemon juice
  • 1 1/2 tsp salt
  • some freshly ground pepper

Super Easy: Carrot Soy Sprout Salad with Black Sesame

Again, one of those "stuff I still had in the fridge" meals. :) The salad was one half of our lunches today. The other part was fried rice with veggies and sesame. Oh, sesame. <3

Ingredients:

  • 4 medium carrots
  • a handfull of fresh soy sprouts (whatever happens, never ever use the nonperishable ones that are sold in glasses!)
  • 6 nice leaves of lettuce
  • 200g of soy (or any other non-dairy) yoghurt
  • 1 tablespoon of mustard
  • 1 tablespoon of vegan honey (yes, this exists, basically, it's honey flavored sugar...stuff)
  • salt
  • 50g of black sesame (or really... as much as you like. Sesame is good for you!)

Creamy Salsify and Chickpea Salad

Yet another one of those recipes that originate in the mysteries the veggie box our local organic farmer brings. We had a couple of salsify roots again and I decided not to put them in a stew like I did the last time we got them. So today, they went into a creamy salad along with chickpeas, some lettuce, and a few slices of raw zucchini.

Ingredients:

  • 3 large salsify roots
  • 100g of precooked chickpeas
  • half of a small zucchini, cut in slices with a julienne slicer
  • 4 large leafs of lettuce
  • 150g of soy yoghurt
  • 4 table spoons of white vinegar (make sure you get a nice, yummy vinegar, not just some cheap sour stuff)
  • salt
  • pepper

Easy: Bulgur Quinoa Salad

Let's face it, this was supposed to be a bulgur salad. Then I realized I only had one cup of bulgur left, so I cooked an extra cup of quinoa. So if you don't have quinoa, feel free to double the bulgur... or use couscous instead!



Ingredients:

  • 1 cup of bulgur
  • 1 cup of quinoa 
  • 4 cups of water
  • 1 jar of dried tomatoes in oil (ca. 300g) - do not throw out the oil!
  • 150g of dried cranberries
  • some fresh basil
  • salt and pepper

Unexpected combinations: Beets + Orange + Chili + Hokkaido Squash

Today is one of those days where I started cooking with a vague idea in mind and it turned out great! I may even have discovered my new favorite salad!

These are the heroes of our dish: Hokkaido squash, oranges, beets!


And this is what our finished dish looks like: Ovenbaked hokkaido squash with a beets and orange salad with a sweet chili dressing.



Ingredients: 


  • 1 Hokkaido squash
  • 3 oranges
  • beets (I had one big one, but just try to match the volume of the oranges)
  • a bit of fresh ginger
  • two garlic cloves of garlic
  • some olive oil
  • agave sirup
  • sriracha (or sambal oelek or any other chili sauce)
  • salt
  • pepper

optional: a few pomegranate seeds for decoration
a bit of soy sauce
