Simple Sommerpasta | Simple Summer Pasta

English version below

Pasta mit Spinat und Spargel | Pasta with spinach and asparagus

English version below

Pasta in Spinat-Sahne-Sauce | Pasta in a spinach and cream sauce

English version below

Spaghetti Sommer Rollen | Spaghetti Summer Rolls

English version below

Pesto Pasta Salat | Pesto Pasta Salad

English version below

English version below

This is one of those recipes that I came up with because some ingredients needed to go. In this case, we are talking about some perfectly fine, yet slightly dehydrated bell peppers. Contemplating the next day's lunch, I figured a pasta sauce would be a good choice. It's super simple to make, too!

Creamy pasta sauce will be served with arugula, tomatoes,
and moxxarella at work tomorrow!

My childhood favorite veganized: Kässpätzle

For my our 10-year anniversary, the boyfriend and I had been looking for a nicer restaurant that would get us good vegan food. Our favorite Thai place was great last year, but since we had just been there a few weeks ago, we decided to just cook at home. Kässpätzle (elsewhere described as the mother of mac and cheese with caramelized onions) with our favorite brand of mock duck, and red cabbage. Too good!

Comfort Food: Mac'n'Cheese

I grew up with Kässpätzle as my favorite food. Basically, that's homemade (at least where I grew up) egg-based Swabian noodles baked with lots of cheese and caramelized onions. Now, I have not managed to make anything that is quite as good as what my Mom used to make, however, the following recipe is great and super tasty.

Oh and I recently got a really cool recipe (at a vegan dinner party that was thrown for me in Philadelphia!) for egg-less spätzle that tasted incredibly great! So I may come up with a Kässpätzle recipe some time in the future.

Cannelloni filled with Spinach in Tomato Sauce

It's fairly difficult to get a nice looking picture of cooked cannelloni. They always tend to look like a big pile of stuff drowing in tomato sauce. I hope this picture is still as appetizing as the food was when we had it for lunch today!
Unless you prepare the tomato sauce in advance, this is a rather time consuming meal. Just a heads up.

Ingredients:

  • 200g fresh spinach
  • 3 onions
  • 5 cloves of garlic
  • a handfull of fresh basil
  • 200ml veggie stock
  • 200ml plant milk
  • ca. 250g of vegan cheese
  • salt
  • 250g of cannelloni pasta
  • 1 tablespoon of sugar
  • a handfull of dried shiitake mushrooms
  • 1000ml of pureed tomatoes
  • 3 table spoons of corn starch
  • 4 table spoons of yeast flakes
  • a bit of oil for frying
  • 4 tablespoons of oil the the roux (Yes, I'll explain, what a roux is)

Mediterranean Pasta Salad

This pasta salad is a family favorite. I would usually use arugula instead of the basil, but it's not in season right now, so it's super expensive. The fresh, organic basil was a special offer today! Hooray!

Ingredients:

  • 2 large zucchinis
  • 300g of Hello Kitty pasta (the salad gets exponentionally better with Hello Kitty pasta, but regular pasta works, too)
  • one glass of dried tomatoes (225g drain weight)
  • 5 fresh tomatoes
  • lots of fresh basil (I used as much as you can see on the picture - the whole thing!)
  • 3 tablespoons vegan honey (agave sirup works, too)
  • 60g (7-8 tablespoons) olive oil
  • some extra olive oil for frying
  • 60g (7-8 tablespoons) balsamic vinegar
  • 3 tablespoons mustard
  • salt
  • pepper
