Vanilla Cupcakes with Vanilla Buttercream and Strawberries

The strawberry season is here and we decided two kilos of strawberries were a good way to start! Apart from eating the just like that and putting them in my overnight oats, we knew we had to use them in more ways. Cupcakes seemed like a great option!


Ingredients for 12 Vanilla Cupcakes

  • 250 ml soy milk
  • 1 1/2 teaspoon of apple cider vinegar
  • 175g wheat flour
  • 20g of cornstarch
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 pack of vanilla sugar (or flavor)
  • 60g of sunflower oil
  • 150g of raw cane sugar

Ingredients for the topping:

  • 1 pack of vanilla flavored custard powder
  • 250ml of soy milk
  • 2 tablespoons of sugar (more if you like your butter cream sweeter)
  • 100g of margarine (I used Alsan)
  • 12 small strawberries (about the size of a hazelnut or a little bigger)
  • a handfull of strawberries of any size :)


Instructions:

  • Line a cupcake pan with cupcake liners.
  • Preheat oven to 180°C/350°F.
  • In a medium bowl, mix the soy milk with apple cider vinegar. Mix well and set aside for a few minutes.
  • In the meantime, sift together flour, baking soda, baking powder, and salt.
  • Add the sugar, vanilla sugar, and oil to the soy milk/vinegar mixture and blend together.
  • Little by little, add the flour mixture to the other ingredients and blend well.
  • Wash the strawberries and remove the green parts.
  • Add 2 tablespoons of cake batter to each of the 12 cupcake liners. 
  • Then add one of the small strawberries to each cupcake liner.
  • Add the rest of the cake batter to the liners, covering the strawberries.
  • Bake the cupcakes for 22 minutes at 180°C/350°F.
  • While the cupcakes are baking, take a few table spoons of the soy milk for the topping, and use them to mix the sugar with the vanilla flavored custard powder. Turn it into a smooth mixture.
  • Bring the rest of the soy milk to a boil in a small sauce pan.
  • Once the soy milk has briefly boiled, pour in the mixture of milk/custard powder/sugar.
  • Take the sauce pan off the heat and stir well.
  • You should notice that the milk is thickening. If it isn't, briefly put it back on the heat again, stirring continuously. 
  • When the milk thickens, stir in the margarine.
  • Set aside to let the cream cool down.
  • Allow the cupcakes and the cream to cool down.
  • Once they have cooled down, spread the vanilla cream on top of the cupcakes.
  • Slice the strawberries. 
  • Decorate the cupcakes with the strawberries.
  • Done! :)



Deutsche Übersetzung:

Die Erdbeersaison hat angefangen und wir haben uns gedacht, dass zwei Kilo Erdbeeren doch mal ein guter Anfang sind. Nur so essen oder in meine Overnight Oats werfen hat nicht gereicht, aber wir wollten noch andere Sachen damit machen. Cupcakes erschienen uns wie ne gute Idee.

Zutaten für 12 Vanille-Cupcakes

  • 250 ml Sojamilch
  • 1 1/2 TL Apfelessig
  • 175g Weizenmehl
  • 20g Speisestärke
  • 1 TL Backpulver
  • 1/2 TL Natron
  • 1/2 TL Salz
  • 1 Päckchen Vanillezucker (oder Vanillearoma oder echte Vanille)
  • 60g Sonnenblumenöl
  • 150g Rohrohrzucker

Zutaten für alles, was so oben drauf kommt:

  • 1 Päckchen Vanillepuddingpulver
  • 250ml Sojamilch
  • 2 Esslöffel Zucker (oder mehr, wenn du die Creme süßer magst)
  • 100g of Margarine (Ich habe Alsan benutzt)
  • 12 kleine Erdbeeren (etwa in Größe einer Haselnuss oder etwas größer)
  • eine Hand voll Erdbeeren, egal welcher Größe :)

Zubereitung:

  • Ein Cupcakeblech mit Cupcakeförmchen auslegen.
  • Ofen auf 180°C/350°F vorheizen.
  • In einer mittelgroßen Schüssel Sojamilch und Essig mischen. Gut verrühren und ein paar Minuten zur Seite stellen. 
  • In der Zwischenzeit Mehl, Backpulver, Natron und Salz vermischen.
  • Zucker, Vanillezucker und Öl zu der Milch/Essig-Mischung geben und gut verrühren.
  • Nach und nach die Mehlmischung zu den anderen Zutaten geben und gut verrühren
  • Erdbeeren waschen und das Grün entfernen.
  • 2 Esslöffel Teig in jedes Cupcakeförmchen geben. Dann jeweils eine Erdbeere in jedes Förmchen geben und leicht eindrücken.
  • Den Rest des Teiges gleichmäßig auf die Cupcakeförmchen verteilen.
  • Cupcakes 22 Minuten bei 180°C/350°F backen.
  • Während die Cupcakes im Ofen sind einige Esslöffel Sojamilch nutzen um Zucker und Puddingpulver zu einer glatten Masse zu rühren.
  • Den Rest der Milch in einem kleinen Topf zu kochen bringen.
  • Sobald die Milch kocht, Topf von der Hitze nehmen und die Milch/Puddingpulver/Zucker-Mischung hinzugeben und gut verrühren.
  • Die Milch sollte nun langsam andicken. Wenn das nicht passiert, nochmal kurz aufkochen. Immer gut rühren, damit nichts anbrennt.
  • Sobald die Milch andickt, Margarine einrühren.
  • Zur Seite stellen und abkühlen lassen.
  • Cupcakes abkühlen und Creme abkühlen lassen.
  • Sobald alles abgekühlt ist, Creme auf den Cupcakes verteilen.
  • Erdbeeren schneiden.
  • Cupcakes mit Erdbeeren dekorieren.
  • Fertig! :)
