The boyfriend requested I'd make potato salad for our birthday party - with his mother's recipe. So here is the vegan version of it!
Ingredients:
- 400g of vegan mayonaise [here is my recipe for a quick and easy vegan mayo]
- OR 200g of Mayo and 200g of soy yoghurt!
- 1.5 kg of potatoes (the waxy type)
- 500g of carrots
- Pickles
- 2 medium sized onions
- salt
- pepper
Instructions:
- Clean the potatoes and cook them in their skin.
- While the potatoes are cooking, peel the carrots and cut them in small cubes. Cook them briefly in salt water (so they don't get mushy).
- Cut the pickles in small pieces.
- Cut the onions in fine cubes.
- Once the potatoes are cooked, put them in a bowl with cold water and peel them. Slice the potatoes.
- While the potatoes are cooking, make mayo - unless you have prepared it in advance.
- If desired, mix in some plain soy yoghurt = more sauce, less fat.
- Season mayo/yoghurt with salt and pepper (unless you're already happy with it).
- Put all of the ingredients in a bowl.
- Mix well.
