Ingredients:
Anything that needs to get out of your fridge. In my case:
- (cooked) white and red rice
- Carrots
- Onions
- Savoy Cabbage
- Chick peas
- Leeks
- Mock Duck
- Salt
- a clove of garlic
- a few table spoons of canola oil
- optional: some soy sauce
Instructions:
- If you don't have rice left over, cook some.
- Peel the onions, cut them in small chunks. The same goes for the carrots.
- Clean the leeks and cut thin slices.
- Remove the stem from the savoy cabbage and cut the leaves in small pieces.
- Drain the water from the canned chick peas.
- Chop the garlic.
- Cut up the mock duck.
- Get a big pan and fry the onions with the garlic and the carrots in a bit of oil for a few minutes.
- Add the rice and mix it with the other veggies.
- Add the leeks and savoy cabbage, mix well with the rest and fry for another minute or two.
- Season with salt and/or soy sauce.
- In a separate pan, fry the mock duck in canola oil until nice and crisp.
- Then, add the mock duck bits to the rest.
- Serve. Enjoy!
You can really add anything else: Corn, beans, bell peppers, tomatoes, nuts...
