Mittagessen KW08/2018 | Lunch plans week 08/2018

English version below

Curry (rote Linsen, Spinat, Blumenkohl)

This week, we'll destroy the last Christmas leftovers: Sauerbraten!

Curry (red lentils, spinach, cauliflower)
I'll improvise a bit here... Cook cauliflower and red lentils. Briefly fry a finely cut onion and some garlic in a bit of oil. Add massaman curry past and finish with puréed tomatoes and veggie stock. Stirr well, add lentils, cauliflower, and spinach. Done :)

Sauerbraten, potatoes, green beans
Oh, this will be a lazy day. We still have frozen leftover sauerbraten from Christmas. You can find the recipe here - leftover freeze very well!

Pea soup
I still need to get around to typing up the recipe... Pea soup is Mr. Squirrel's specialty! I have to ask him for the recipe...

Sweet and sour tofu with rice and broccoli
I always have deep fried tofu (this is how!) in the freezer, so I don't always have to go through the whole deep frying process... Having this readily available cuts the prep time for sweet and sour tofu (recipe) quite a bit.
I'll make twice the rice I'd usually need so I have extra for the next day.

Leftover rice
Another simple lunch! I'll just fry the leftover rice with whatever I can find. :) Carrots, spring onions, ... Maybe I'll add a bit of curry powder, or I'll pick a different seasoning. Either way, I'm making sure any leftovers are used up.
