Okara Schnitzel!

You made soy milk and have no idea what to make with the leftovers? To be honest, I almost like the leftovers better than the soymilk. But that's because Mr. Squirrel knows how to use the leftovers, which go by "okara." Here is how he did it!





Ingredients:

  • 250g of okara (the amount we got from this recipe)
  • 250g of flour
  • 150g breadcrumbs
  • 1 onion
  • 2 tablespoons of tomato puree
  • 1 teaspoon of mustard
  • 5 tablespoons of soy sauce
  • 1 teaspoon of salt
  • 1 tablespoon of yeast extract
  • 3 teaspoons of paprika
  • 1 clove of garlic (or 1/2 teaspoon of granulated garlic)
  • ½ teaspoon of nutmeg
  • some oil for frying

Instructions:


  • Mix okara, flour, tomato puree, salt, pepper, and mustard to a bowl. 
  • Add soy sauce, yeast extract, freshly ground nutmeg, paprika, and fresh garlic.




  • Chop the onion into fine dices. 
  • Add to okara mixture and turn into a smooth dough.



  • Form schnitzels/patties, and coat in breadcrumbs. 
  • The patties should not need any pre-coating in egg replacer or the like because they should be sticky enough to hold on to the breading.



  • Fry in hot oil.











Deutsche Übersetzung:



Wenn man Sojamilch gemacht hat und keine Ahnung hat, was man mit den Resten machen soll. Ehrlich gesagt mag ich die Reste lieber als die Sojamilch. Aber das liegt daran, dass Mr. Squirrel weiß, was man mit den Resten, die man übrigens "Okara" nennt, machen kann. Und zwar das hier: 



Ingredients:

  • 250g Okara (Die Reste von  diesem Rezept)
  • 250g Mehl
  • 150g Paniermehl
  • 1 Zwiebel
  • 2 EL Tomatenmark
  • 1 TL Senf
  • 5 EL Sojasauce
  • 1 EL Hefeextrakt
  • 1 TL Salz 
  • 3 TL Paprika
  • 1 Zehe Knoblauch (oder ½ TL Knoblauchgranulat)
  • ½ TL Muskat
  • etwas Öl zum Braten

Instructions:


  • Okara, Mehl, Tomatenmark, Salz, Pfeffer und Senf in eine Schüssel geben. 
  • Soja sauce, Hefeextrakt, frisch geriebene Muskatnuss, Paprika und frischen Garlic dazugeben.




  • Zwiebel fein würfeln. 
  • Zwiebelwürfelchen zur Okaramischung geben und gut einkneten.



  • Schnitzels formen und in Paniermehl wenden.
  • Die Schnitzel brauchen keine Extraschicht aus Eiersatz oder so, weil sie klebrig genug sein sollten damit das Paniermehl an ihnen haftet.



  • In heißem  Öl ausbraten.
