Mittagessen KW39/2019 | Lunch plans week 39/2019

Sooo. Nach der zweiwöchigen Hochzeits- und Erholungsphase muss ich wieder an die Schüppe - und das natürlich auch wieder mit ordentlicher Lunchplanung. Diese Woche gibt es Folgendes:
  • Salat mit Nudeln
  • Sojadönerteller mit Salat
  • Rahmgeschnetzeltes mit Rösti und grünen Bohnen
  • Antipasti mit Hummus
  • Käse-Lauch-Suppe



Salat mit Nudeln
Wir sind am Sonntag noch unterwegs, darum wollte für Montag was vorbereiten, was schnell geht. Also koche ich ca. 50g Nudeln (Gewicht = ungekocht) pro Person und schichte alles mit Salat, Tomaten, Gurke, Mais, Bohnen, geraspelten Möhren... Was hat so passt. Dazu mache ich ein Joghurtdressing. Wahrscheinlich meine Joghurt-Tahin-Sauce (Rezept).

Sojadönerteller mit Salat
Für den Sojadöner koche ich Sojaschnetzel in Gemüsebrühe (mit etwas Tomatenmark und Sojasauce drin) auf und mariniere sie in einer Mischung aus Öl und Dönergewürz (da sind Dinge drin wie Paprika, Chili, Knoblauch, Basilikum, Oregano, Rosmarin...). Dann anbraten - fertig. Dazu etwas Salat, Gurke, Tomate, eingelegte Chilis und Krautsalat (den kaufe ich dazu).
Und dann noch etwas Joghurtsauce (ungesüßter Sojajoghurt mit etwas Öl, Zitronensaft, Salz und Zucker). Wenn ich Minze oder Petersilie finde, kommt die auch mit rein.

Rahmgeschnetzeltes mit Rösti und grünen Bohnen
Hier ist mein Rezept für Rahmgeschnetzeltes (Lebkuchengewürz optional), aber ich werde noch Reste von unserer Hochzeit aufbrauchen, die wir eingefroren haben. Fürs Rösti reibe ich einfach ein paar rohe Kartoffeln, salze leicht und forme Rösti, die ich in der Pfanne backe.

Antipasti mit Hummus
Einfach mal n paar Auberginen, Zucchini, Paprika und Möhren im Ofen backen. Dazu ein paar getrocknete Tomaten und Oliven. Und jede Menge Hummus (Rezept). Wenn ich noch Zeit habe, gehe ich beim uns im arabischen Supermarkt vorbei und hole ein paar Simit, also Sesamringe!

Käse-Lauch-Suppe
Endlich ist wieder die richtige Jahreszeit für diesen Klassiker! Hier findet ihr das Rezept.

Sooo. After my two week wedding and recovery phase, I have to get back to the daily grind - of course with a decent lunch plan! This week, we're having the following meals:
  • Salad with pasta
  • Soy kebab with salad
  • Soy ragout with hashbrowns and green beans
  • Antipasti with hummus
  • Cheesy leek soup


Salad with pasta
We have some plans for Sunday, so I wanted a meal that I could easily prepare for Monday. I'll cook 50g of pasta (weight = uncooked) per person, and then layer everthing with lettuce, tomatoes, cucumber, sweet corn, kidney beans, grated carrots... whatever we like. And I'll make a yogurt dressing. Probably my tahin yoghurt sauce (recipe).

Soy kebab with salad
For the soy kebab, I use textured soy protein (pieces that are about the size of a pinkie), cook the protein in veggie stock with soy sauce and a bit of tomato puree, then I marinate them in a mixture of oil and kebab spices (paprika, chili, garlic, basil, oregano, rosemary...). Fry it up - done! I'll pack the lunch box with some salad (lettuce, cucumber, tomatoes, pickled peppers) and some oil/vinegar coleslaw (this is a component I usually buy).
Plus a little yogurt sauce (unsweetened soy yogurt with a little bit of oil, lemon juice, salt, and sugar). If I find mint or parsley, they'll go in the sauce as well.

Soy ragout with hashbrowns and green beans
This is my recipe for soy ragout (gingerbread spices optional), but I'll be using up leftovers from our wedding which I put in the freezer. For the hashbrowns, I'll just grate some potatoes, salt them and then form hashbrowns and fry them.

Antipasti with hummus
Just a couple of eggplants, zucchini, peppers and carrots baked in the oven paired with some dried tomatoes, and olives. And lots of hummus (recipe). If I have the time, I'll drop by our favorite Arab supermarket to get some simit, a circular sesame bread.
