Hörchenhappen | Squirrel bites

English version below

Ich war mir unsicher, wie ich die Dinger nennen sollte. Darum hatte ich auf Facebook mal nach Vorschlägen gefragt. Und da hat jemand treffend festgestellt, dass das Gericht zwei meiner "Signature" Gerichte sind und darum Squirrelbites ja passen würde. Joa. Nehm ich :) Oder mit weniger Anglizismus: Hörchenhappen.




Kleine Vorwarnung: Das sind viele kleine Arbeitsschritte - holt euch Unterstützung beim Schnibbeln / Vorbereiten, dann geht es viel schneller :)

Extratipp: Ihr könnt Teig und Sauce schon am Vortag machen. Ich habe den fertig gekneteten Teig einfach in einer Schüssel über Nacht im Kühlschrank stehen lassen!


Zutaten für 24-28 Stück:

Boden: (genau wie bei meinen Tomatenbrötchen!)
  • 450g Weizenmehl
  • 1-2 EL Gluten (muss nicht, macht aber den Teig schöner)
  • 15g Salz
  • 2 EL Rapsöl
  • 1 Paket Trockenhefe (oder ein Würfel frische Hefe)
  • 200g Tomatenmark
  • 2 EL Zucker
  • etwas lauwarmes Wasser


Käsesauce (Hauptrezept hier!):
aus dem Saucenrezept bekommt ihr mehr als ich für dieses Rezept braucht. Das ist aber ok, weil man die Käsesauce für alle benutzen kann! Nachos, Sandwiches, Burger, überbacken...!
  • 360g Kartoffeln (vor dem Schälen)
  • 150g Möhren (vor dem Schälen)
  • 75g Öl (was neutrales, Raps oder Sonnenblume)
  • 125ml Wasser oder Hafermilch oder Sojamilch (da ist dann Soja drin)
  • 2 TL Salz
  • 1 TL Zitronensaft
  • 50g Hefeflocken
  • ½ TL Knoblauchpulver
  • ½ TL Zwiebelpulver 
  • ½ TL Cayennepfeffer
  • 1 TL Senf

Füllung 1:
  • 5-6 Stangen grüner Spargel
  • 10-12 schwarze Oliven
  • 200g Champignons

Füllung 2:
  • 1 rote Zwiebel
  • 150g Räuchertofu
  • 2 Frühlingszwiebeln
  • 5 getrocknete Tomaten

Sonstiges:

  • Bisschen Öl
  • Bisschen Salz
  • Etwas Hartweizengries um ausrollen des Teigs
  • frische Kräuter zum Dekorieren (z.B. Basilikum, Petersilie und/oder Rukola)
  • ein paar Cherrytomaten zum Dekorieren
  • ggf. etwas Rosmarin und Kaffirlimettenblätter (ok, das ist echt speziell - absolut optional!)
  • ggf. ein Schuss Sojasauce und ein EL Ahornsirup



Zubereitung:

Zubereitung Teig:
  • Mehl, Gluten, Salz, Hefe, Zucker und Kräuter (wenn man welche benutzt) mischen.
  • Öl und Tomatenmark dazu geben.
  • Alles schön verkneten.
  • Etwas Wasser, wenn notwendig, dazu geben, damit man einen schönen glatten Teig hinbekommt. Nicht klebrig, definitiv nicht feucht, aber auch nicht krümelig.
  • Teig etwa eine halbe Stunde gehen lassen, dann noch mal durch kneten.
  • Portionieren. Ich mache jeweils 35g pro Portion.
  • Teigportionen noch mal ne halbe Stunde (oder auch länger, wenn ihr Zeit habt) abgedeckt gehen lassen. Ich lege sie dazu auf ein Backblech mit Backpapier und decke mit einem Küchenhandtuch ab.

Zubereitung Sauce:
Kartoffeln und Möhren schälen und in nicht gesalzenem Wasser gar kochen.
Alle Saucenzutaten zusammen in den Mixer geben und pürieren.
Fertig.


Zubereitung Füllung 1: 
Oliven entkernen und klein schneiden.
Champignons in dünne Scheiben schneiden und mit etwas Öl in einer Pfanne langsam braten.
Beim Spargel die trockenen Enden entfernen und dann auch mit etwas Öl in der Pfanne braten. Im Anschluss klein schneiden.
Alles in einer Schüssel mischen.


Zubereitung Füllung 2: 
Getrocknete Tomaten klein schneiden.
Zwiebel würfeln und in etwas Öl langsam in einer Pfanne karamelisieren.
Frühlingszwiebeln in feine Scheiben schneiden.
Räuchertofu fein würfeln.
Optional: Ein wenig frischen Rosmarin und Kaffirlimettenblätter fein hacken und dazu geben.
Optional: Einen Schuss Sojasauce und einen EL Ahornsirup dazu geben.
Alles in einer Schüssel mischen.





Weitere Zubereitung:

  • Ofen auf 225°C/435°F vorheizen und Backbleche mit Backpapier auslegen.
  • Teig dünn auf etwas Hartweizengries ausrollen und die Ränder einschlagen, damit der Rand etwas erhöht ist.



  • Etwas Käsesauce auf den einzelnen Teigstücken verteilen.


  • Füllung auf dem Teig verteilen.


  • Bei 225°C/435°F 10 Minuten backen.
  • Mit Kräutern und/oder Cherrytomaten garnieren.
  • Fertig! :)

English version

I wasn't really sure what to call these things. So I asked for suggestions on facebook. Someone noticed corrently, that this recipe uses two of my "signature" recipes, and thus suggested "squirrel bites". Sounds good to me :)






A little warning: This requires lots of small steps - get someone to help you out with all the veggie cutting/prep work, so you can get everything done faster :)

Extra tipp: You can make the dough and sauce the day before. I just leave the kneaded dough in a covered bowl in the fridge over night!


Ingredients for about 24-28 Stück:

Crust: (just like my tomato rolls!)
  • 450g of wheat flour (regular wheat is fine, wholewheat is fine, spelt can also be used...)
  • a table spoon or two of gluten (you can also omit this, but I like my dough better with it)
  • 15g salt
  • 2 tablespoons of canola oil
  • dried or fresh oregano and/or basil (optional)
  • 1 pack of dry yeast (or a cube of fresh yeast)
  • 200g of tomato paste (the type that has been concentrated 2 or 3 times)
  • 2 tbsp of sugar
  • a bit of lukewarm water


Cheese sauce (main recipe here):
This recipe will yield more than you will actually need for the squirrel bites. That's ok because you can use the cheese sauce for everything! Nachos, sandwiches, burgers, in au gratin meals...
  • 360g of potatoes (before peeling)
  • 150g of carrots (before peeling)
  • 75g of oil (I prefer sunflower or canola)
  • 125ml of water or oat milk or soy milk (not soy-free)
  • 2 teaspoons of salt
  • 1 tablespoon of lemon juice
  • 50g of yeast flakes
  • ½ teaspoon of powdered garlic
  • ½ teaspoon powdered onion 
  • ½ teaspoon cayenne pepper
  • 1 teaspoon of mustard

Filling 1:
  • 5-6 pieces of green asparagus
  • 10-12 black olives
  • 200g mushrooms

Füllung 2:
  • 1 red onion
  • 150g smoked tofu
  • 2 spring onions
  • 5 dried tomatoes

Other ingredients:

  • some oil
  • some salt
  • some durum wheat/semolina to roll the dough with
  • Fresh herbs for decoration (for example basil, parsley and/or arugula)
  • a couple of cherry tomatoes for decoration
  • maybe some rosemary and kaffir lime leaves (ok, this is quite specific - and very optional!)
  • maybe a dash of soy sauce and a table spoon of maple syrup



Instructions:


The Dough:
  • Mix flour, salt, sugar, yeast, and herbs (if you're using any).
  • Add oil and tomato paste.
  • Knead.
  • Add water and knead until you get a nice smooth dough. Not too sticky, definitely not too moist, but not crumbly either.
  • Allow dough to rest for half an hour, then knead again.
  • Cut up portions. I made 35g/1¼ oz. portions.
  • Allow portions to rest (covered) for half an hour (or longer if you have the time). I usually put them on a baking sheet lined with baking paper and cover them with a dish towel.


Sauce prep:
Peel carrots and potatoes and cook them in unsalted water.
Add all of the other ingredients for the sauce to a blender and blend away.
Done.


Filling 1: 
Pit olives and cut them into small pieces.
Thinly slice mushrooms and slowly fry in a pan in a little bit of oil.
Remove the dry bottom parts of the asparagus stalks and fry in a pan in a bit of oil.
Remove from pan and slice into small pieces.
Mix everything in a bowl.

Filling 2: 
Cut dried tomatoes into small pieces.
Cut onions into cubes, and slowly caramelize in a bit of oil in a pan.
Cut spring onions into small slices.
Finely cube smoked tofu.
Optional: Chop up some rosemary and kaffir lime leaves and add to the mix.
Optional: Add a dash of soy sauce and a tablespoon of maple syrup.
Mix everything in a bowl.





Other prep:

  • Preheat oven to 225°C/435°F and line some baking sheets with baking paper.
  • Roll out dough thinly, covering the bottom part in semolina.
  • Wrap up the outer parts of the dough, so the outside is a bit thicker than the rest.


  • Spread some cheese sauce on all of the dough pieces.


  • Spread filling on the dough.


  • Bake for 10 minutes at 225°C/435°F.
  • Garnish with herbs and cherry tomatoes.
  • Done :)
