Gebratene Nudeln mit Gemüse | Fried noodles with veggies

Ich habe schon ein Rezept für gebratene Nudeln, aber letztendlich habe ich noch eine etwas simplere Version, die mit etwas weniger Zutaten auskommt. Da ich unter der Woche ja immer für den Folgetag vorkoche, bin ich dann immer ganz froh, wenn ich meine Einkäufe und die Vorbereitung planen kann. Hier ist also meine "reduzierte" aber nicht minder leckere Variante der gebratenen Nudeln.





Zutaten für 2 Portionen:
  • 2-3 "Nester" an asiatischen Nudeln (ich kaufe im Asialaden die Long Life Quick Cooking Noodles, aber aufpassen: es gibt welche mit und welche ohne Ei!)
  • 2 mittelgroße Möhren
  • 1 Zwiebel
  • 3-4 Frühlingszwiebeln
  • eine Hand voll frische Sojasprossen
  • eine Hand voll frittierter Tofustückchen (bereite ich immer vor und friere dann ein)
  • Sojasauce
  • Sambal Oelek/Sriracha 
  • Öl

Zubereitung:
  • Nudeln in gesalzenem Wasser kurz kochen. Sie sollten noch al dente sein!
  • Nudeln in ein Sieb abgießen und mit kaltem Wasser abspülen (ja, wirklich. Wenn die Nudeln jetzt weiter garen und zusammen kleben, kann man sie später nicht mehr schön verwenden)
  • Zwiebel halbieren und in feine Streifen schneiden.
  • Möhren schälen und in streichholzgroße Stifte schneiden.
  • Frühlingszwiebeln in ca. 5 cm lange Streifen schneiden.
  • Öl in einer Pfanne bei geringer Hitze (2-3/10) erhitzen.
  • Möhren, Zwiebeln und den weißen Teil der Frühlingszwiebeln hinzugeben.
  • 1-2 Minuten anbraten.
  • Nudeln dazu geben (am besten das Nudelnest ein bisschen entwirren, damit die Nudeln nicht als ein Block drin liegen)
  • Ich lasse alles dann immer 30-45 Sekunden ohne es in der Pfanne zu bewegen, damit sich so kleine Röststellen bilden.
  • Mit einem guten Schuss Sojasauce würzen.
  • Zwischendurch gelegentlich umrühren und braten bis die Möhren und Zwiebeln gar sind.
  • Anschließend Sprossen, die grünen Teile der Frühlingszwiebeln und die Tofustückchen dazu geben und noch mal mit Sojasauce abschmecken.
  • Mit Sriracha oder Sambal Oelek servieren.
Extratipp, wenn ihr das Essen für den nächsten Tag vorbereitet: 
Sobald die Möhren und Zwiebeln gar sind, könnt ihr die Pfanne von der heißen Platte nehmen. Sprossen, die grünen Teile der Frühlingszwiebeln und die Tofustückchen dazugeben und alles mit einem Schluck Sojasauce umrühren und abkühlen lassen. Wenn ihr die Tofustückchen aus dem Gefrierschrank nehmt wie ich es meistens tue, hilft das, das Essen möglichst schnell abzukühlen.

English version 

I already have a recipe for fried noodles, but in the end I also have a simpler version that uses fewer ingredients. Since I always cook for the following day during the week, I am always glad if I can do my shopping, planning and prepping ahead. So here's my "reduced" but no less tasty version of fried noodles.




Ingredients for 2 servings:
  • 2-3 "nests" of Asian noodles (I usually buy the brand Long Life Quick Cooking Noodles, but watch out: There's one kind with and one without eggs!)
  • 2 medium sized carrots
  • 1 onion
  • 3-4 spring onions
  • a hand full of fresh soy sprouts
  • a hand full of deep fried tofu pieces (I always make a big batch ahead and freeze them)
  • soy sauce
  • Sambal Oelek/Sriracha 
  • oil

Instructions:
  • Briefly cook noodles in salted water. They should still be al dente!
  • Pour noodles into a colander and rinse with cold water (yes, really. If the noodles continue to cook and stick together, you won't really be able to use them as nicely afterwards.)
  • Cut onions in half, slice thinly.
  • Peel carrots and cut into matchstick-sized pieces. 
  • Cut spring onions in the 5cm/2in strips.
  • Heat up oil in a pan (low heat, 2-3/10).
  • Add carrots, onions, and the white part of the spring onions to the pan.
  • Fry for a minute or two.
  • Add noodles. The best way is to pick detangle the noodle nests to make sure you don't get one big blob of noodles in the pan)
  • I then usually let everything sit in the pan for 30-45 minutes without stirring, so we get a little roast flavor in.
  • Add a good dash of soy sauce.
  • Stirr every now and then until carrots and onions are cooked.
  • Next, add sprouts, the green parts of the spring onions and the tofu pieces.
  • Season with soy sauce.
  • Serve with Sriracha or sambal oelek.


Extra tip, if you're preparing food for the next day:
Once the carrots and onions are cooked, you can take the pan off the hot stove. Just add sprouts, the green parts of the spring onions, and the pieces of deep fried tofu, season with soy sauce and mix well. Allow everything to cool down. If you take the tofu pieces from the freezer, like I usually do, adding the frozen pieces helps the food cool down quickly!
