I like my food vegan and my guests hungry. Stay tuned for plant-based awesomesauce!

Gebratene Nudeln mit Gemüse | Fried noodles with veggies
English version below

Gochujang Tofu
English version below

Kitchen Basics | Frittierter Tofu | Deep-fried Tofu
English version below
Was ihr braucht?

Tofu süß-sauer | Sweet and sour tofu
English version below!

Sweet and Sour Tofu with Veggies
I needed to switch up my lunch routine, so I decided to see if I could wing a sweet and sour sauce. According to Mr. Squirrel, I can. :)

Simple: Brussels Sprouts FTW
I always eat Brussels sprouts when Mr. Squirrel isn't home because he hates them. But I don't. :)
A super tasty way to make them is to boil them first and to then fry them.

Mondays are always a bit of a challenge: I always prepare a lunch for work for my colleague and myself... but I want to vary what I bring. So I keep my eyes open for new ideas and suggestions. Today, the Vegan Food Nerd came to my rescue. Their dish inspired me to pick up some of the basic ingredients they used and to come up with something new myself. :)
This is not actually a Thai recipe. But the nice noodles, coconut milk, and red Thai curry paste made me call it that! :D
Ingredients for 6 generous portions:
- 400g of rice noodles (the type that looks like fettuccine, about 4mm, ca. 1/6 in)
- 300g of soy sprouts
- 3 bell peppers (red, yellow, green)
- 1 large zucchini
- 250g of snowpeas
- 1l of coconut milk
- some oil (for example sunflower)
- 2 tablespoons of red Thai curry paste - if you like it hotter, use more (double check the ingredients! Curry pastes are not always vegan/vegetarian!)
- some soy sauce
- some salt
- 2 limes
- 100g of (unsalted) peanuts
- 400g of tofu (it's the squishy type which I buy at the Asian supermarket, not the firm stuff)
You will also need: A big pot, a deep-fryer. If you don't have a deep-fryer, I suppose you can also fry the tofu in a pan, but it won't be quite as nice.

Fried Rice with Veggies and Sesame
Very easy and a great way to use up any veggies that need to go and, of course, if you have leftover rice! I used leftover white rice and some purple rice, but any type will do.
Ingredients for 5 servings:
- 300g of rice (300g before cooking)
- 4 medium carrots
- 300g of smoked tofu
- 4 small onions
- 1 medium zucchini
- 50g of sesame seeds
- soy sauce
- salt
- 1 tablespoon of powdered curry
- some vegetable oil
- some roasted sesame oil (the dark yummy oil, not the light tasteless stuff)

Vegan Kitchen Staples
Since my friend Joni (who is new to exclusively plant-based cooking) asked for some explanation of the things that appear to be more exotic to those who cook conventionally, I decided to collect a few things that I find in my pantry to explain them.
Firstly, I would like to mention that you can easily cook awesome vegan food without using soy, seitan, and all these other things. The main ingredient in my kitchen will alwaysdesc be vegetables, fruits, legumes, nuts, etc. There is nothing wrong with tofu etc., but in my kitchen vegan cooking does not have to mean that I copy conventional recipes and replace meat with tofu. I do that sometimes, because I used to enjoy eating meat. I do not think that there is anything wrong with the taste of it, I just no longer see the necessity to use meat/dairy/eggs in order to get a great meal.
So. The main ingredient that should be available anywhere near you is this:
