Ausstechkekse | Sugar Cookies

Bei uns zu hause hießen diese Kekse immer Spekulatius, obwohl gar keine besonderen Gewürze drin waren... Mit dem Teig wurden dann zu Weihnachten und Ostern Kekse gebacken und die komplette Küche mit Mehl eingesaut :) Das war super. Jetzt muss ich selbst putzen, darum wird zwar gebacken, aber weniger enthusiastisch rumgesaut :)



Zutaten:
420g Mehl
2 TL Backpulver
250g Alsan
320g Zucker
1 EL Vanillezucker
90ml Sojamilch (oder Hafermilch etc)
3 EL Sojamehl
1/2 TL Salz
+ Mehl zum Ausrollen


Zubereitung:

  • Mehl, Backpulver, Zucker, Salz, Sojamehl und Vanillezucker vermischen.
  • Sojamilch dazugeben.
  • In kleine Stückchen geschnittene, kalte Alsan dazu geben und alles zu einem Teig verarbeiten. 
  • Idealerweise macht ihr das mit den Händen (vormischen mit Knethaken geht aber auch gut!).
  • Sollte der Teig nicht schön weich sein sondern zu trocken wirken, einfach noch einen kleinen Schluck Wasser oder Sojamilch dazugeben.
  • Teig abdecken und 2-3 Stunden im Kühlschrank kühlen.
  • Ofen auf 180°C/350°F vorheizen.
  • Backbleche mit Backpapier bereitstellen.
  • Arbeitsfläche mit etwas Mehl bestäuben.
  • Eine Portion Teig nehmen (z.B. so viel wie in eine Suppenkelle passt) und ausrollen.
  • Nehmt nicht zu große Portionen, das endet nur damit, das am Schluss alles festklebt.
  • Teig vorsichtig mit einem gemehlten Nudelholz auf etwa 3mm Dicke ausrollen und Kekse ausstechen.
  • Kekse auf ein Backblech mit Backpapier legen. 
  • Wenn das Blech voll ist bei 180°C/350°F etwa 5 Minuten backen.
  • Die Backzeit hängt davon ab, wie dick eure Kekse sind. Am besten habt ihr ein Auge drauf und nehmt sie raus, sobald sie an den Rändern braun werden.

These cookies went by "speculaas" at home when I was a kid although they don't contain any of the spices commonly found in speculaas/speculoos cookies... We used the recipe for Christmas and Easter, making a big mess in the kitchen. :) Good times! Now that I have to clean my own kitchen, we do bake, but the messes we make are smaller :)


Ingredients:
420g of flour
2 tsp of baking powder
250g of vegan butter
320g of sugar
1 tbsp of vanilla sugar (or add aroma)
90ml of soy milk (or oat milk etc)
3 tbsp of soy flour
1/2 tsp of salt
+ flour to roll out the dough


Instructions:

  • Mix flour, baking powder, sugar, salt, soy flour, and vanilla sugar.
  • Add soy milk.
  • Cut the vegan butter into small piecees and turn everything into a smooth dough.
  • Ideally, you'll do this with your hands (you can mix it with dough hooks first).
  • The dough should be nice and smooth. Should it be a bit too dry, add a dash of water or soy milk.
  • Cover dough and put in the fridge to chill for 2-3 hours.
  • Preheat oven to 180°C/350°F.
  • Cover cookie sheets with baking paper.
  • Dust table or counter with flour.
  • Take a portion of dough (for example as much as you could fit in a soup ladle) and roll out.
  • Don't take portions that are too big, it will end in everything sticking to the counter.
  • Carefully roll out the dough to about 3mm (1/9th of an in... a bit thicker than a match) and use those cookie cutters!
  • Place cookies on a cookie sheet that's lined with baking paper. 
  • Once you filled it up, bake at 180°C/350°F for about 5 minutes.
  • The baking time depends on how thick your cookies are. 
  • Keep an eye on the cookies and take them out once the edges start to brown.
