Ausstechkekse | Sugar Cookies

Bei uns zu hause hießen diese Kekse immer Spekulatius, obwohl gar keine besonderen Gewürze drin waren... Mit dem Teig wurden dann zu Weihnachten und Ostern Kekse gebacken und die komplette Küche mit Mehl eingesaut :) Das war super. Jetzt muss ich selbst putzen, darum wird zwar gebacken, aber weniger enthusiastisch rumgesaut :)

Bei uns heißen die Kekse ja Husarenkrapfen und sie sind Mr. Squirrels Lieblingsweihnachtskekse. Als ich die Kekse gepostet habe, bin ich dann aber auch darauf gestoßen, dass die Dinge auch "Engelsaugen" heiße. Gruselig! Besonders mit der roten Marmeladeniris! O_O

Ich finde ja, zu Krankenhausbesuchen muss man immer was mitbringen, am liebsten natürlich Essen. Vorzugsweise etwas, was besser ist als das, womit man im Krankenhaus konfrontiert ist. Darum habe ich heute morgen schnell ein paar Nougat-Walnuss-Rollen mit Schokolade zusammen geworfen. Sind auch heute nachmittag sehr gut angekommen. :)

Beer cupcakes. There I said it.

My team manager's birthday was last week and it is customary where I work that coworkers decorate the desk of the birthday boy/girl and bring cake. So I took over the cake part. And since my colleague is allergic to a number of things and I didn't want to openly ask her about things that should not be in the cake, I decided to make a cake from ingredients that I had seen her eat at work. Now the beer part might sound a bit odd in this context, but I should probably mention, she once brought a beer and walnut cake. So... here we are:

In the course of finding my own recipe for a brownie cheesecake I ate at the Grindcore House in Philadelphia, PA, the first step, of course, included finding a great recipe for brownies! I think I found it!

Mississippi Mud Pie

Inspired by my friends over at the used to be guerilla Café Mousebear/soon to be an actual café Krümelküche, I made Mississippi Mud Pie for a friend's birthday.


These are the ingredients for a 26cm/10¼in springform:

Ingredients for the dough base:

  • 260g of flour
  • 30g of cocoa powder
  • 200g of margarine
  • 35g of raw cane sugar
  • 3 table spoons of water

Ingredients for the chocolate cream filling:

  • 50g of margarine
  • 90g of raw cane sugar
  • 2 table spoons of soy flour
  • 2 table spoons of cocoa powder
  • 50g of dark chocolate
  • 100g of soy cream (or rice, oat, coconut cream etc.)



For the topping: 

  • 300g of whippable vegan cream (if it's sweatened, great, if not, add some sugar)
  • 50g of dark chocolate

Product Test: Lupinesse Ice Cream

What? In English and German. :) Even though the ice cream is only available in Germany.
Was? Auf englisch und deutsch. :) Obwohl es das Eis nur in Deutschland gibt.

I have not had decent "milk" ice cream in a while. We used to have a small place by our uni campus that sold amazing oat milk based ice cream.... then they closed. :( So we went out to a supermarket that we rarely visit because we had read about Lupinesse ice cream - ice cream based on blue lupin!

Ich habe schon lange kein "Milch"-Eis mehr gegessen. Wir hatten mal einen kleinen Laden um die Ecke von der Uni, bei dem es total großartiges Hafermilcheis gegeben hat... und dann haben sie dicht gemacht. :( Also sind wir mal zu einem Supermarkt gefahren, in dem wir sonst eher selten sind (Real), weil wir von Lupinesse Eis gelesen hatten - Eis, das aus blauer Lupine hergestellt wird.

Glorious Oreo-free Raspberry Oreo Cheesecake

Oh my - best Easter Cake ever. I am also fairly certain that it works on other holidays or random days of the week. The recipe will follow as soon as I recover from quality family time, concert extravaganza, and general awesomeness with friends and other great people. I may also have to get some work done before I devote time to food blogging. ;)

But I promise: The recipe will follow. This is too good not to share it.

Now. Here is the recipe. Finally! :) I've had quite a few people - including our lovely couchsurfer Conor from New Zealand - ask for the recipe. 

Why "oreo-free" and still oreo? Because the original recipe asked for oreo cookies... and I decided to omit them and to make my own chocolate cake base etc. It works just fine and it's probably cheaper, too. And you don't have to buy palm oil oreos. :)

Death by Chocolate Cupcakes with Nougat



Die DEUTSCHE ÜBERSETZUNG findet ihr unter dem englischen Rezept!


Ingredients for 12 cupcakes:

  • 150g of flour
  • 150g of sugar
  • 50g cocoa powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • a pinch of salt
  • 300ml of oat milk (or any other plant milk): 250ml for the cupcakes, 50ml for the ganache
  • 2 teaspoons of apple cider vinegar
  • 80g of canola or sunflower oil
  • 200g of dark chocolate: 100g for the cupcakes, 100g for the ganache
  • 40g of maple syrup
  • 125g of nougat

These always work, even if you have
super basic equipment! <3

Perfect Chocolate Chip (Pistachio) Cookies

Oh hai! Cookieturm! <3
Bevor ich mich damals an der Uni eingeschrieben habe, habe ich meinen Sommer nach de Abi damit verbracht bei einem gewissen Sandwichladen zu arbeiten. Ich fands immer am besten, wenn meine Kollegen sich nicht ganz an die Regeln gehalten haben und die Cookies etwas kürzer als gebacken haben als vorgeschrieben. Dann waren die Kekse nämlich schön weich in der Mitte.

Ich bin mir vollkommen darüber im Klaren, dass Probleme wie Salmonellen bei Cookies mit Hühnerei geben kann. Darum war ich überaus begeistert, dass ich jetzt so viel Keksteig essen möchte (könnt ihr auch, oder eure Kinder... oder euer kekstechnisch verantwortungslose/r Partner/in ^^) während ich diese Cookies backe:



 

Zutaten:

  • 150g Rohrohrzucker
  • 120g Zucker 
  • 380g Mehl
  • 200g Pflanzenfett (Ich nehm eigentlich immer Alsan und/oder raffiniertes Kokosfett, aber eigentlich ist jedes Fett in Ordnung, so lange es nicht weich bleibt, wenn es kalt wird)
  • 200g Schokolade
  • 1 TL Backpulver
  • ½ TL Salz
  • 50ml Pflanzenmilch eurer Wahl... oder Wasser (hab ich unten im Foto vergessen)
  • optional: Pistazien

Chocolate Walnut Cranberry Coffee Cake with Pistachios

Ah, another inspiration from the Vegan Food Magazine. On page 55 of their first issue, they published a lovely recipe ("Chocolate Pecan Cranberry Coffee Cake") by Fran Costigan. I changed it according to my taste, available produce and equipment. It turned out perfect! At least as far as I can tell. This is definitely my favorite fall/winter cake! It's super juicy, but the nuts give it a nice crunch, and the chocolate and maple syrup give it a wonderful rich taste! It is a bit costly because of all the awesome ingredients, but... that's okay.
 

Equipment

  • a 28cm/11in springform pan
  • a scale
  • 2 cooling racks (or one rack and a plate)
  • 3 bowls (one small, one medium and one large bowl) 
  • an oven
  • parchment paper
  • a mixer or whisk
  • a knife and cutting board
  • a juicer (nothing fancy, just the thing that you use with citrus fruits cut in half)
  • a fine grater 
  • a spoon or two
  • a bain-marie and a small pot
