I started out making a sauce out of things that had to go for whatever reason: Veggies on the verge of looking less Next Veggie Top Model, open packs of pureed tomatoes from yesterday's pizza... that sort of thing. I ended up with the best sauce ever! It will go well with our Tomato Lentil Bites (filled with Cashew Feta) at my work Christmas party tonight!

Easy: Creamy Spinach with Chickpeas and Peanuts

So, I am not in my usual kitchen environment. Instead of enjoying the beautiful Ruhrgebiet, I am in New York City! Only temporarily, though. I am still settling in and finding my way around, particularly in the supermarkets, but I am glad to have access to a kitchen in the apartment in which I'm subletting a room. I had originally intended to make something along the lines of my world famous (ok, it's not... yet!) Sesame Spinach, but since I couldn't find any sesame seeds, I had to come up with something else. And I like what happened as I threw together my very, very limited selection of food items. Getting set up in a kitchen without having anything in the pantry or fridge whatsoever is quite the challenge. But it worked! :D

Cannelloni filled with Spinach in Tomato Sauce

It's fairly difficult to get a nice looking picture of cooked cannelloni. They always tend to look like a big pile of stuff drowing in tomato sauce. I hope this picture is still as appetizing as the food was when we had it for lunch today!
Unless you prepare the tomato sauce in advance, this is a rather time consuming meal. Just a heads up.
Ingredients:
- 200g fresh spinach
- 3 onions
- 5 cloves of garlic
- a handfull of fresh basil
- 200ml veggie stock
- 200ml plant milk
- ca. 250g of vegan cheese
- salt
- 250g of cannelloni pasta
- 1 tablespoon of sugar
- a handfull of dried shiitake mushrooms
- 1000ml of pureed tomatoes
- 3 table spoons of corn starch
- 4 table spoons of yeast flakes
- a bit of oil for frying
- 4 tablespoons of oil the the roux (Yes, I'll explain,what a roux is)

Red Lentil Veggie Soup

Yet another incredibly easy dish! And super tasty, too. If you happen to not have one ingredient or the other in the house, you can always replace things. You can basically swap out any of the veggies as long as you stick to the lentils, water, and seasoning.
Ingredients for six servings:
- 150g red lentils
- 3 large carrots
- 1 leek
- 3 onions
- 3 cloves of garlic
- fresh ginger (about the size of a thumb)
- salt
- 3 tablespoons of vegetable oil, for example, sunflower seed oil.
- 50g tomato paste
- 1l of water
- a handfull of hazelnuts
- half a green bell pepper
- half a red bell pepper
- 2 table spoons of balsamic vinegar
- a handfull of fresh herbs, for example, parsley or basil

Cajun Spice? Cajun Fries!
Die DEUTSCHE ÜBERSETZUNG findet ihr unter dem englischen Rezept!
I love Cajun fries, so when we made burgers and fries for a dinner with our friends, I figured a bit more than salt wouldn't hurt.
Cajun spice is easy to make and can be stored in a cleaned jam jar if you wish.
Ingredients:
- 4 teaspoons of sea salt
- 2 teaspoons of Cayenne pepper
- 4 teaspoons of garlic granulate
- 5 teaspoons (sweet) paprika
- 2 teaspoons freshly ground pepper
- 2 teaspoons roasted onions (or onion powder)
- 3 teaspoons dried oregano
- 3 teaspoons dried thyme
Instructions:
- Throw everything in a blender and blend.
- Store in an airtight container and sprinkle it on food (tofu, seitan, potatoes, fries, ... anything!).

Cajun Gewürz
Ich liebe Cajun Fries. Als wir für unser
Drei-Gang-Dinner für unsere Freunde Burger und Pommes gemacht haben, dachte
ich mir, dass die Pommes auch gerne etwas mehr als Salz vertragen könnten.
Cajun Gewürz ist sehr einfach herzustellen und kann wunderbar in einem
alten (sauberen) Marmeladenglas aufbewahrt warden.
Zutaten:
- 4 Teelöffel Meersalz
- 2 Teelöffel Cayennepfeffer
- 4 Teelöffel Knoblauchgranulat
- 5 Teelöffel Paprika edelsüß
- 2 Teelöffel frisch gemahlener
schwarzer Pfeffer
- 2 Teelöffel Röstzwiebeln (oder Zwiebelgranulat)
- 3 Teelöffel getrockneter
Oregano
- 3 Teelöffel getrockneter Thymian
Zubereitung:
- Alles
ab in den Zerkleinerer und schön zerkleinern.
- In einem luftdichten Container aufbewahren und auf Essen streuen (Tofu, Seitan, Kartoffeln, Pommes, alles!)

Fried Polenta
I originally got the recipe for fried polenta from my friend Sarah (who is currently doing a crowd funding campaign to open a vegan café in Duisburg, Germany. Check out the campaign website!) - and hers are still far superior to mine. At least visually. But I'm working on the presentation aspect!
Ingredients:
- 800ml of veggie stock (check the polenta packaging in case the suggested amount of liquid differs from this)
- 200g of polenta
- 6 small onions
- 2 cloves of garlic
- 150g dried tomatoes
- lots of fresh basil
- salt, black pepper, paprika, cayenne pepper

Dips, dips, dips: "Honey" Aioli

Fortunately, my little sister loves cooking food for her guests as much as I do, so I had the wonderful opportunity to first steal and then modify a recipe from her latest birthday party. The glorious, glorious honey aioli. Her version was vegetarian, so I decided to make a vegan one.
The basis for the honey aioli is mayonaise, a traditionally very unvegan product. Conventionally made with egg yolks, I knew there had to be a way to avoid them.
