Saté / Satay Sauce

Eigentlich mochte ich lange Zeit keine Erdnüsse. Schon gar nicht als Sauce. Aber die Zeiten ändern sich :)
Vielleicht habe ich in der vergangenen Woche drei Mal Satéspießchen gegessen um jedes Mal neu die Sauce zu testen und Veränderungen zu machen. Vielleicht auch nicht... Heute waren wir zufrieden :)

Das ist schon wieder so ein Rezept, das fast zu einfach ist, als dass ich dran gedacht hätte es zu posten. Ich hab aber so viele Anfragen bekommen, dass ich es schnell mal dokumentieren sollte :)
Die Sauce ist sehr vielseitig einsetzbar - als Salatsauce, als Dip, als Sauce auf Lunchboxen (z.B. auf Brokkoli + Süßkartoffeln), auf Sandwiches... <3

Senf-Ahorn-Sahnesauce | Mustard Maple Cream Sauce

Hachja, schon wieder so ein Rezept, das entstanden ist, weil die Sachen grade da waren. Der Senf, den ich hier benutze ist ein Biersenf aus der Monschauer Senfmühle und so toll! Meine beste Freundin war grade in Monschau und hat mir direkt mal 1,5kg mitgebracht :) Ihr müsst nicht speziell den Biersenf haben, aber nehmt einen Senf, der richtig gut schmeckt. 

Die Sauce war super zu der Mock Duck. Kann man aber sicher auch zu anderen Sachen machen.

Teriyaki Sauce

Mr. Squirrel hat mal wieder Teriyakisauce gemacht. Super lecker und sorgt dafür, dass man mal eben aus Gemüse und Reis (und vielleicht ein bisschen Mock Duck) was Tolles zaubern kann!

Mittagessen: Gebratene Mock Duck, Gemüse und Reis in Teriyakisauce.

Curry Sauce

Where I am from, a good Currywurst (a bratwurst with the curry sauce you'll find in this recipe) is of great cultural value. Songs have been written about it, and different regions in Germany claim that their version of the dish is the best - while that clearly isn't true. ;) We've gotten a lot of requests for the recipe - because we tend to bring the sauce to barbecues - so here it is (roughly based on the version of my friend Hanna over at FoodbyHon).

My love for home made hummus is great. Great enough to consider using it as the base for a salad dressing. And it made one creamy, beautiful vinaigrette for my quinoa veggie salad!

Smoked Tomato Paprika Sauce

I started out making a sauce out of things that had to go for whatever reason: Veggies on the verge of looking less Next Veggie Top Model, open packs of pureed tomatoes from yesterday's pizza... that sort of thing. I ended up with the best sauce ever! It will go well with our Tomato Lentil Bites (filled with Cashew Feta) at my work Christmas party tonight!

Sweet and Sour Sauce

Simple and tasty, this sauce goes well with spring rolls, on sandwiches, or barbecued goods.


Ingredients:

  • 2 red bell peppers
  • 2 cloves of garlic
  • 7 tablespoons of rice vinegar
  • 13 tablespoons of raw cane sugar
  • 2 tablespoons of soy sauce
  • 1 teaspoon of tapioca starch
  • 200ml of water
  • optional: sambal oelek (if you like your sweet and sour sauce hot!)

Cannelloni filled with Spinach in Tomato Sauce

It's fairly difficult to get a nice looking picture of cooked cannelloni. They always tend to look like a big pile of stuff drowing in tomato sauce. I hope this picture is still as appetizing as the food was when we had it for lunch today!
Unless you prepare the tomato sauce in advance, this is a rather time consuming meal. Just a heads up.

Ingredients:

  • 200g fresh spinach
  • 3 onions
  • 5 cloves of garlic
  • a handfull of fresh basil
  • 200ml veggie stock
  • 200ml plant milk
  • ca. 250g of vegan cheese
  • salt
  • 250g of cannelloni pasta
  • 1 tablespoon of sugar
  • a handfull of dried shiitake mushrooms
  • 1000ml of pureed tomatoes
  • 3 table spoons of corn starch
  • 4 table spoons of yeast flakes
  • a bit of oil for frying
  • 4 tablespoons of oil the the roux (Yes, I'll explain,what a roux is)

Apple Crumble with Salted Caramel Sauce

Seit ich in der Bretagne in Frankreich war, liebe ich gesalzenes Karamell. Das Salz vestärkt den Geschmack des karamelisierten Zuckeres. Während meiner letzten Bretagnereise war ich noch "nur" Vegetarier, weshalb die caramel au beurre salé  Erfahrung großartig war - aber ich kann keine vegane Version finden. Also musste ich meine eigene Version machen. Aber das ist ok. Ist gar nicht so schwer. :)

Dips, dips, dips: "Honey" Aioli

Fortunately, my little sister loves cooking food for her guests as much as I do, so I had the wonderful opportunity to first steal and then modify a recipe from her latest birthday party. The glorious, glorious honey aioli. Her version was vegetarian, so I decided to make a vegan one.

The basis for the honey aioli is mayonaise, a traditionally very unvegan product. Conventionally made with egg yolks, I knew there had to be a way to avoid them.
